GRILLED TUNA AND SHRIMP SKEWERS ANYONE

Here are two skewer recipes that are sure to please. You may want to prepare these for your Memorial Day BBQ. Hello summertime..........

GRILLED SHRIMP SKEWER

What You Will Need:

16 large shrimp, shelled and veined

1/2 cup cognac or Jack Daniels (I've even used Malibu coconut rum)

16 thin slices prosciutto or ham

16 fresh sage or bay leaves

2 tablespoons bread crumbs

1/2 teaspoon salt

1/2 teaspoon pepper

2 teaspoons lemon juice

What To Do:

Wash shrimp and marinade in choice of cognac, Jack Daniels or Malibu rum for one hour. Drain and wrap each shrimp in slice of prosciutto or ham. Place shrimp alternatively on skewers with sage or bay leaves. Roll skewers in bread crumbs, sprinkle with salt and pepper and place on grill, covered with grill lid, over high heat (500° to 550°), 1 and 1/2 minutes on each side or to desired degree of doneness. They should be golden brown in color. Sprinkle with lemon juice and serve very hot.

FRESH TUNA SKEWER

What You Will Need:

1 pound fresh tuna

1 long loaf French bread

bay leaves

fresh sage leaves

1/4 cup melted butter

1/2 teaspoon salt

1/2 teaspoon pepper

2 tablespoons olive oil

4 teaspoons lemon juice

What To Do:

Soak tuna in ice water for one hour, dry and slice into 1 inch cubes. Cut the bread into thin slices. Place one piece of fish on skewer, a bay leaf, a slice of bread, a sage leaf. Repeat this procedure until all fish is used, using as many skewers as needed. Dip skewers into melted butter, sprinkle with salt and pepper and then brush with olive oil. Grill time at about 4" above medium hot coals should be about 10 to 12 minutes. Once removed from the grill, sprinkle with lemon juice and serve hot.

Add vegetable Kabobs and you have a hearty, healthy meal to serve. Enjoy!
