MERLUZZO WITH SPAGHETTI

MERLUZZO WITH SPAGHETTI
What You Will Need:
6 ounces uncooked spaghetti
1 tablespoon and 1 teaspoon olive oil
2 tablespoons minced garlic
1 pound and 4 ounces cod fillet, sliced into 2 inch strips
2 cups chopped, seeded tomatoes
1 cup shredded, fresh basil
1/2 cup fresh spinach, shredded
1/2 cup tomato puree'
1/2 cup lightly sauteed mushrooms
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
What To Do:
In large pot of boiling water cook spaghetti for 8-10 minutes, until tender. Drain and place in serving bowl, keep warm. In large skillet heat oil. Add the garlic, then cod. Cook 2-3 minutes until fish is cooked and flakes when tested with a fork. Stir in tomatoes, basil, puree, salt and pepper. Continue to cook until heated through. Pour into serving bowl with spaghetti. Add the fresh spinach, basil and mushrooms. Toss to combine thoroughly.
You may want to serve with a spinach salad tossed with a simple Balsamic Vinaigrette. Presto! Dinner is Ready.
