Easy To Make Lemon Poppy Seed Muffins

A colleague of mine celebrates a birthday tomorrow. I almost forgot –it was too late to get a gift so just whipped up a batch of their favourite treats -Lemon Poppy Seed Muffins instead of buying a gift.

For the recipe I have used two of my favourite Food resources Joy of Baking’s American Sponge Cake Recipe and Jamie Oliver’s Almond Cake with Lemon and Poppy Seeds.

This is a fairly simple recipe which is nearly full proof.All ingredients can be whizzed together of you have a good blender like the Kitchen Aid which I don't have so if you're in the same boat as me fear not you can still pull this off with ease by using a hand held or electric beater.

Do note that this recipe does not use any baking powder but relies on the egg white to rise.To ensure that your muffins don't end up as flat cakes be sure to whip the egg whites until fluffy and gently fold the egg white into the batter.


  • 120g butter
  • 50g sugar (The recipe calls for 120g sugar but I have reduced this).
  • 4eggs
  • 2 lemons
  • 180g flour
  • 2 tablespoons milk
  • 75g Poppy Seeds
  • 50g icing sugar
  • 1tablesppon all spice


  1. Preheat oven to 150 degrees. Make sure butter and eggs are at room temperature.
  2. Separate eggs.
  3. Mix egg yolks butter until creamy.
  4. Add flour, all spice and sugar.
  5. Add lemon juice and lemon zest.
  6. Whip egg whites until fluffy. Add icing sugar.
  7. Add egg white mixture to the First mixtures. Gently fold mixing together. Add poppy seeds.
  8. Line muffin pan with muffin cups. Pour mixture then bake for 30 minutes on 150degress.
  9. Gently insert a tooth pick to check if cooked once the muffins have risen.
  10. Top with freshly grated lemon rind...serve hot or the next day or wrap in a handmade gift box to give to someone special.

ooooooohhhhhhhhh looks scrumptious!!! if i was any good at the kitchen, i would make some, but i'm not! so i'm going to get some from the bakery tomorrow!!!

This sure is a delicious treat, KTB. I used to make orange muffins on board ship as snacks for my co-seafarers.
