Lemon Pudding

This is the recipe for my delicious Lemon Pudding! My family's favorite ( at the moment ).
I do have a number of pudding recipes that they ask me to make, but this Lemon Pudding one is always first on their list, I have tried and tried to teach them how to make this delicious pudding, but they tell me that it is much easier for them and tastes better if I make it, so I don't protest too much, just get on with it, and it's nice to know that they still like my cooking, A little boost to my ego so to speak :) :).

There is no secret it is just a matter of following the recipe !

Ta Dum ...Drum roll.... so here it is for you all to try to enjoy !

Ingredients

1 cup milk
1/2 cup sugar
3 x eggs
1 x tablespoon self raising flour
grated rind and juice of one lemon
pinch of salt
1 x tablespoon of sugar extra

 
If you would like it a little more tart than sweet, use 2 lemons.

Stand mixture in shallow pan of cold water prior to placing in oven!

Cooking Instructions

 
1. Seperate eggs, beat yolks with 1/2 a cup of sugar until light and creamy, beat in milk, sifted flour, rind and juice of lemon(s) and add salt.


2. Beat egg whites adding extra sugar gradually, continue beating until stiff but not dry. Lightly fold into lemon mixture.

3. Pour into greased, deep, 2 pint ovenproof dish.

  • Stand in a shallow pan of cold water.
  • Bake in a moderate oven for 50 to 60 minutes.
  • If you think it is cooking too fast on the top I just put a piece of tin foil on top , so as it doesn't get too brown before its cooked right through.

Serving

I hope that makes sense. There should be enough mixture for four healthy servings.

You can dress it with pure cream, fresh or frozen yoghourt.

It is scrumptious served hot , but it is also very nice served cold from the fridge.

It really is yummy.

Je t'adore. There's nothing equal to good home cooking, I can taste it and smell it just by looking, would you like to come over for afternoon tea, I'll do the tea, you bring the cake.

Pamela99.Hi. Yes lemon is out there on it's own as far as flavor is concerned. I have never tried it , but I guess if you would like it to be a little more tart you could add 1/2 a lemon extra. Thank you for your lovely comment. :) :)

Something else you may like to try is, cut a thin slice of lemon, glaze it with honey, warm it through, and place one slice in the middle of each serving bowl. I have not tried it, but will next time I make this Lemon Pudding. Thank you again so very much for your encouraging comment. :) :)

It is a very nice Lemon flavored pudding and not too hard to make, and would be good practice.

I have to admit, Chocolate cookies are one biscuit that I have never made or purchased from the store. Are they easy to make.

These days not to hard to make, but have to taste nice, is the way to go for me.

Yes it is probably more Australian or English.

I have never made a Souffle, but I guess it could be likened to one.

it was very tasty. a bit like a souffle. correct oven temp would have usefull though.

mairead. Hi. I'm pleased that you enjoyed the lemon pudding recipe and yes it is a bit like souffle. As far as the temperature of the oven is concerned I have been told that temperature will vary from oven to oven and whether the oven is electric or gas (we have natural and mains here). I have experimented with settings and find that on my natural gas oven 180F works just fine. In my reference book that relates to a "moderate" oven !

Thanks for raising that point there may be other people unaware of this setting :) :)

Really sounds terrific - I was thinking the same thing on the oven temp. My thought had been 200F. My kids will love this recipe!

Stephhicks. Hi. It is a great tasting pudding with a wonderful lemon flavor.

The temperature at 200F I feel would be too hot, my oven is run on bottled gas, we do not have piped in gas, an electric oven may be different I'm not sure.

You could try 200F, you would know fairly soon if it's too hot as the pudding would brown to quickly on top, then burn.

The reference books on temperature that I've checked out so far are almost the same, so I will look further into it.

My family love this pudding and I hope your's will too.

You can have as little or as much bite as you like, just by adjusting the amount of lemon juice.

It's wonderful to be able to play around with Recipes, so that you can get them exactly how you want them to suit you own taste.

Leche flan I think is a pastry/custard type sweet.

This recipe is a pudding, which you could not cut into slices, as it is too soft.

I have never made a leche flan, but would like to try one.
