Mint Cloud Meringues

These sweet treats are light as air, gluten free and sure to become a family favorite.

1 C Mini Chocolate Chips

¼ t. Mint Extract

2 Egg Whites

¼ t. of Cream of Tartar

1/8 t. Vanilla Extract

¾ C Sugar

Preheat oven to 250 degrees. Line cookie sheet with parchment paper. Put mini chocolate chips in a small bowl. Sprinkle mint extract over chips and mix with a spoon. Set aside bowl of mint chips. Whip 2 egg whites in mixer until frothy. Add cream of tartar and whip until soft peaks. Add vanilla and sugar a tablespoon at a time. Whip until stiff peaks form. Fold in chocolate chips. With a mini ice cream scoop, drop scoops of the mixture on the cookie sheet. Bake for 30 minutes. Cool and keep in an airtight container.

Tip:

Anytime a recipe that calls for mint chocolate chips, you can always make your own by adding mint extract to your chips.
