Non-disgusting vegan meal
Sausage and peppers
Here's a meal for vegans who call foul on the slimy raw leaflet feed that fills vegan cookbooks. Hopefully a supermarket near you has a non-meat substitute for sausage. I thought for sure nobody carried these Tofurky sausage things near me until I figured out they were kept in the shredded cheese refrigerated section. Grocery stores take pride in hiding their stock from the leaf-eaters.
So get a package of 4 of Tofurky Italian Sausage, 6 green peppers, 3 onions, tomato sauce (eight 8 oz. cans should do it), black pepper, parsley, and oregano.
Cut up the green peppers and onions. I cut mine in strips about finger length. Toss em in a crockpot.
Brown the sausages in a pan. We do this mostly so they hold together when we slice and cook them. They'll cook fully in the crock.
When they're browned slice them. I cut mine in small round slices, but lengthwise works too. Throw those in the crock.
Add the sauce. Throw in the seasoning, as much as you want. If the food doesn't fit, get a power drill and drill the lid down (in case there's kids reading, I'm just kidding, don't do that). Set it on high for 6 hours. You don't really need to stir it until the end.
That's it. Spread it on a roll, pasta, Pop Tart, whatever.
Obviously change this up how you want. Use different ingredients, amounts, cooking times, have a ball. This is more fun than sky diving. There is a slightly noticeable difference in taste between this and real sausage, but it's small. Meat eaters will still go for seconds. For a peanut-butter-jelly vegan, it's delicious. There's other non-disgusting vegan foods like burgers & tacos as well. Maybe I'll do one of those later.
