A sausage sandwich is a delicious creation and can be enjoyed at any time of day, from morning to night. Most often, however, it consists merely of a sausage or sausages, stuck between two slices of bread, perhaps with some sauce, relish or mustard added for good measure. After all, in essence, is a hot dog not simply a version of a sausage sandwich? Lorne Sausage, Cheese and Chive Toasted Sandwich

A Scottish Lorne sausage is a sausage which has been sliced from a larger block. It is perfect for making a toasted sandwich like the one below. If you don't have access to them, why not make your own?

Yields: One toasted sandwich

Ingredients

  • 1 Lorne sausage
  • Little bit of vegetable oil
  • 1oz cheddar cheese, grated
  • 1 tsp freshly chopped chives, half for sandwich filling and half to garnish
  • Black pepper
  • 2 slices of bread, each one lightly buttered on one side only

  1. Pour a little oil in to a small frying pan and put it on a medium heat.
  2. Fry the sausage for about three minutes each side until just cooked. Even if you normally like it well done and crispy, remember it will cook further in the sandwich toaster.
  3. Remove the sausage to a plate, cover and leave for about ten minutes minimum to cool.
  4. Put your sandwich toaster on to heat. Combine the cheese, half the chives and a good sprinkling of black pepper in a small bowl.
  5. Lay the first slice of bread in the sandwich toaster, buttered side down.
  6. Put the sausage on the bread and scatter evenly with the cheese combination.
  7. The second slice of bread is now added, buttered side up. Close the sandwich toaster and cook for about five minutes or until done as you like it.
  8. Cut the sandwich in half to serve, garnished with the remaining chives. Do remember that particularly when you have cheese on a toasted sandwich it can stay very hot for several minutes, so you may wish to wait briefly before tucking in.

  • 2 thick pork sausages
  • Oil for frying
  • ½ red bell pepper, seeded and sliced
  • ¼ red onion, peeled and sliced
  • 1 garlic clove, peeled and finely chopped
  • Salt and pepper
  • 2 tsp freshly chopped parsley
  • 1 sub roll, cut open
  • 2 tsp apple sauce

  1. Fry the sausages very gently in oil in a small frying pan. These sausages were particularly thick, so took about twenty minutes.
  2. Remove the sausages to a holding plate and add the bell pepper, onion and garlic to the pan. Season and turn up the heat to medium. Stir fry for three or four minutes.
  3. Stir the parsley through the vegetables before lifting them on to the sub with cooking tongs.
  4. Cut the sausages in half lengthways and sit them on top of the vegetables before spooning on the apple sauce.

It may be the case that you have a supermarket or store within easy reach which sells more types of sausages than you would imagine. This is an incredibly easy way of varying the sausage sandwiches you are used to and a few minutes spent browsing the relevant section of your supermarket can often pay handsome dividends.

Ingredients

  • 2 beef link sausages, each chopped in to five pieces
  • Oil for frying
  • 1 small (8oz) can chopped tomatoes in tomato juice
  • ½ tsp hot chilli powder
  • Splash or two of Tabasco sauce
  • Salt and pepper
  • 1 sub roll, cut open, almost but not quite in half
  • 2 or 3 basil leaves, shredded, to garnish

  1. Add the sausage pieces to some warmed oil in a small frying pan. Stir fry over a medium heat for a few minutes until the pieces are evenly browned.
  2. Pour in the tomatoes and add the spices and seasonings. Be very careful with the Tabasco - you can always add more later but you can't take it out. Stir well and bring to a simmer.
  3. Continue to simmer the mix, stirring occasionally, for about ten minutes or until the excess liquid has evaporated and a thick sauce is formed, coating the sausage pieces.
  4. Taste for seasoning and adjust if required before spooning the mix in to the opened sub and scattering with the chopped basil.

Sausage, Chips and Beans Sandwich Recipe - One for the Kids

Sausage, chips and beans is a stereotypical childrens' favourite in the UK. This really simple creation is basically just a fun way of varying a long established dish. A Lorne sausage was again used in this instance but a conventional sausage works equally well. Cut it in half lengthways when it is cooked and lay the two halves on the roll, side by side and flat (cut) sides down.

An alternative and even simpler version of this sausage sandwich would be where you are enjoying the traditional sausages and beans at camp. Why not stick them on a sandwich?

Ready in: 15 min (approx)

Yields: One bread roll sandwich

Ingredients

  • 1 Lorne sausage
  • Vegetable oil to fry
  • 4 or 5 homemade chips
  • 1 tbsp baked beans in tomato sauce
  • 1 bread roll, halved horizontally
  • HP Sauce or similar (optional)

  1. Fry the sausage in a little oil, over a medium heat, for about three minutes each side.
  2. Sit the cooked sausage on the bottom half of the roll, followed by the chips and the baked beans. Drizzle with HP Sauce if desired.
  3. Place the top of the roll in place and this incredibly simple variation on a classic theme is ready to eat.

  1. Fry the sausages very gently in the oil for about twenty minutes until done. Sit aside for at least fifteen minutes but ideally longer to cool.
  2. Spread the watercress evenly over one slice of bread.
  3. Put the sausages on a chopping board and cut in half lengthways. Sit them on the watercress flat sides down.
  4. Spread the mayo over the sausages, sit the top slice of bread in place and cut in half to serve.

What amazing sausages! My mom doesn't like sausages and I have absolutely no idea why. I just had supper, but I want a second supper! The first one with cheddar and chives is the tastiest of them all, I think.

This is a very detailed hub on sausage sandwich recipes. You have so many recipes and they all look good. You have lots of pictures too and they just help to further visualize things for the reader. The finished sausage sandwiches really look delicious and tasty in those pictures.
