Old Fashion Popcorn Balls

Popcorn balls are a traditional Fall favorite in our family, even though they are a delicious treat at any time of the year. Popcorn is a healthy snack in and of itself. It's easy to prepare and can be popped by way of using a hot air popper or the old fashioned kettle way. I prefer my popcorn to be popped the old fashion way as I think it brings out the natural flavor more than the air popped There are many different recipes for enhancing the flavor of popcorn such as adding cheese, spices, dry sauces and other flavorings. This is our traditional popcorn ball recipe, from my family to yours.


5 quarts popcorn, popped

2 cups sugar

1 1/2 cups water

1/2 teaspoon salt

1/2 cup light corn syrup

1 teaspoon vinegar

1 teaspoon vanilla


1. Pop your popcorn (according to package directions) using either a hot air popper or the old fashioned way

2. Keep popped corn hot and crisp in oven while preparing the candy coating mixture.

3. In heavy saucepan combine sugar, water, salt, corn syrup, and vinegar.

4. Cook to hard ball stage, about 250 on candy thermometer . Add vanilla, stir. Pour slowly over hot popped corn, mixing well to coat every kernel.

5. Butter your hands, press and shape into balls. Be careful not to burn your hands.

Makes about 8 popcorn balls. You can double or even triple this recipe if you need more.

Betty's low-calorie, flavored popcorn.

Old fashion Peanut Brittle

This recipe makes a little over two pounds of peanut brittle. You can double or triple the recipe, if more is desired.


2 cups sugar

1 cup light corn syrup

1cup water

1/4 pound butter

3 1/2 cups raw peanuts

1/2 teaspoon salt

1 teaspoon hot water

1 teaspoon vanilla

1 1/2 teaspoons baking soda


    In large heavy saucepan, put sugar, corn syrup, water and butter. Stir to mix and cook over medium heat. Continue stirring until sugar is dissolved. Let cook at low boil until the syrup spins a thread when dropped from a spoon or until the temp. reaches 230 degrees on a candy thermometer.

  Slowly add the peanuts to allow the sugar mix to continue to boil. Cook until temp reaches about 280 degrees.

  Remove from heat. Add the salt, hot water and vanilla. Return to heat. Stirring constantly, let continue to cook until it's a light golden color. Let cook until at the hard-crack stage or until the candy thermometer reaches 300 degrees.

   Remove from heat and add the baking soda. Stir, just until the mixture foams. Immediately pour onto greased or butter cookie sheet or pan. Using a buttered or greased spoon or spatula; spread the mixture as thin as you can get it.

   Let it cool completely, then break it up by tapping the pan against the counter.

Pizza Bites

Pizza Bites are quick and super easy to make. They're a great idea to satisfy your hunger when you want something crunchy and filling. Great for parties, game day or just a late night snacks. Cover and store leftovers in the refrigerator for up to three days


4 dozen Melba toast rounds or you can substitute 12 slices of white bread, each piece cut into fours and toasted on both sides.

3/4 cups of ketchup

1/2 teaspoon oregano

1teaspoon basil

package of shredded mozzarella cheese

optional-thin sliced pepperoni


Preheat the oven to 350 degrees.

In a medium bowl add the ketchup, oregano and basil. Stir to mix.

Spread the ketchup mixture on the toast.

Sprinkle with the shredded cheese.

optional- top with thin slices of pepperoni

Place on un-greased cookie sheet and bake for three to five minutes or until cheese is melted.

If using the NuWave oven, cook on high for one to two minutes or until cheese melts.

Green Chili Celery Sticks

This is so simple and quick to make. It requires only three main ingredients and is sure to satisfy your snack craving.


4 celery ribs-washed and trimmed and pat dry with paper towel

One 16 ounce carton of plain yogurt

One 4 ounce can of chopped green chilies,  juices drained.

salt and pepper to taste



In medium mixing bowl add the yogurt and drained chilies.

Add the salt and pepper to taste. Stir to mix.

Spoon into the celery ribs.

optional-Sprinkle lightly with Coriander.

Store covered in refrigerator.

Easy Cheese Ball

Although this recipe for a delicious cheese ball is simple to make, it requires more time to finish, due to the chilling process. All I can say is that it's well worth the wait :)


one-8 ounce package cream cheese-room temperature

1/4 cup margarine-room temperature

1 cup bacon-fried or baked crisp and broken into pieces

3 teaspoons chives-chopped

4 ounces of cheddar cheese spread or can substitute with Velveeta

1/2 teaspoon liquid smoke

optional-toasted pecans-chopped fine


In small mixing bowl, add the cream cheese and margarine.

Add the bacon and chives

Blend well, then form into a ball.

In a small bowl, mix the liquid smoke and cheese spread or melted Velveeta. Form around the ball or slowly pour over. Let chill for at least a few hours, overnight is better.

optional- place finely chopped toasted pecans in a cereal size bowl or on a saucer. After the cheese ball is chilled and firm, carefully and gently press it into the pecans, turning the cheese ball to cover the entire area.

Cover remainder with plastic wrap and store in refrigerator.

Oh, so many tasty snacks! They all sounds so delicious but I think I will try the cheese balls first! I have never heard of a pop corn ball before, here we simply add salt to the pop corn and eat them. But this sounds more interesting. Thanks for the lovely recipes! Tina

All sounds delicious, but I keep seeing "2 cups of sugar." Was alot of work getting rid of Type II diabetes. I wonder if I can use "2 cups of saccharine". :)
