Easy Stir-Fried Bok Choy with Tofu Recipe. How to make Chinese Stir fry!
Wok is the most important kitchen tool in Asian kitchen. It's very versatile. We use it on almost every cooking; you name it: steaming, frying, pan frying, and of course stir frying. I love stir frying cooking method since it's quick and easy. Perfect for nowadays busy lifestyle.
One of my favorites vegetables is bok choy, especially baby bok choy. Tender, crisp and light, make it perfect for stir frying. Bok choy and baby bok choy only take one or a couple minutes to cook. Instead of 100% stir frying method, I combine stir frying and steaming method. Steaming bok choy in light chicken broth or water really makes this green better. Here is my very simple quick and easy Chinese stir-fried bok choy with tofu recipe. Tender, crunchy crisp, and soft silky tofu with umami oyster sauce and flavored with ginger garlic infused oil make this simplest dish is a star. This simple-humble greens dish is very easy to fix and taste great, also perfect vegetarian meals. Enjoy.

How to make bok choy with tofu stir-fried
1 lbs bok choy or baby bok choy
1 box fried firm tofu
3 cloves garlic, minced
1/2 tsp grated ginger
1/2 cup chicken stock
2 tbsp oyster sauce
1 tbsp fish sauce or light soy sauce
1 tbsp vegetable oil
1 tsp sesame oil
Remove bok choy leaves from it's stem. Wash and rinse thoroughly from sands. Cut leaves into desired length. I prefer 2 inches. Cut stems into shorter length, about 1/2 inch slices. Cut tofu in small cubes.
Preheat your wok. Add 1 tbsp cooking oil, garlic and ginger into wok. When the oil is hot and produce nice garlicky gingerly aroma, add bok choy stems and tofu. Quickly toss the vegetables and tofu in the garlic ginger infused oil.
Stir fry about 30-40 seconds. Add chicken stock, oyster sauce, bok choy leaves and bring to boil. Cover and cook about 1 minute. Do not over cooked. Turn off the heat and drizzle some sesame oil. Ready to serve with warm rice.

How to choose bok choy/baby bok choy and clean it
Like other greens, you will use leaves and stems for cooking. Bok choy mostly sold in some big chain supermarket such as Walmart and you can find baby bok choy at Asian grocery. If you buy bok choy, choose green leaves, hard and firm stems not yellow and dry up. Also avoid leaves and stems with black spots.
If you do not need it for immediate consumption, store it in the crisper drawer by putting some paper towel to absorb moisture.
Bok choy and baby bok choy need a little bit extra cleaning treatment since sand and soil usually find their way down between stems and leaves. What you need to do are as follows:
- discard outer stems and leaves if they are dirty
- cut the base off to separate each layer stems
- pull every stems and rinse it under cold running water
- trim some unwanted stems or leaves
