Traditional Apple Pie

There is nothing like good old fashioned apple pie.  That is the nice thing about autumn when apples are in season you can make all of your favorite fall deserts.  I can't think of anything that I like more than a tasty apple pie.

How to make the perfect apple pie

Traditional Apple Pie Recipe


For the crust:

12 tablespoons unsalted butter, cold
2 cups + 3 tablespoons pastry flour or 2 cups bleached all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1-1/2 3-ounce packages (4.5 ounces) cream cheese, cold
2 tablespoons ice water
1 tablespoon cider vinegar

For the filling:

2-1/2 pounds baking apples (about 6 medium), peeled, cored and sliced 1/4-inch inch thick
1 tablespoon freshly squeezed lemon juice
1/4 cup light brown sugar, packed
1/4 cup granulated sugar
1/2 to 1-1/2 teaspoons ground cinnamon
1/4 teaspoon nutmeg, preferably freshly grated
1/4 teaspoon salt
2 tablespoons unsalted butter
1 tablespoon + 1 teaspoon cornstarch


Pie Crust

Cut up butter in large bowl. Mix all dry ingredients together separately, then add to butter.
With pastry mixer combine butter with flour mixture. Add egg, vinegar, and water in 1 cup measuring cup) to flour mixture to form soft dough. Do not over mix. Roll out as desired. Fill with your favorite filling.

Bake at 400 F for 20 - 25 minutes
Reduce to 350 F, cook 35 - 45 minutes more

Some sides to have with your apple pie.

A few things that I like to have with my apple pie that complement the perfect desert.  I like to have some old cheddar cheese, vanilla ice cream and a cup of tea.  This caps off the perfect comfort food.
