Eating a variety of vegetables is important to our health. We will do even better if we eat vegetables as fresh as they come. Eating what is in season will give us more nutritious and delicious vegetables. Organic vegetables also tests better and your vegetables will have no chemical fertilizers, pesticides, and no genetic modification.

The freshest vegetables are the once you grow yourself. If you have some space for a garden growing some of your own vegetables is definitely worth it. Tomatoes, lettuce, turnips, carrots, and spinach are some of the vegetables you can grow easily. The next place you can get the freshest vegetables are at CSAs. CSA stands for community supported agriculture. They are relatively new phenomena. The way it works is that you buy membership from a farm along with others and the farm will provide variety of vegetables weekly straight from the soil. This way you will be eating what is in season and local.

If you don’t have access to neither or the above, maybe you have farmers markets in your town or city. There you will find many of your local farmers bringing in their harvest fresh from their farm. Then there are health food stores carrying fresh organic vegetables. These days even regular super markets are displaying fresh organic vegetables. Try to buy the vegetables the day they are delivered. You can always ask the employees of the food store when the vegetables are delivered.

How to Store Various Vegetables

The following vegetables are best stored in the refrigerator, dry and unwashed in a plastic bag: green beans, green peppers, cabbage, eggplant, broccoli, beets, cauliflower, Brussels sprouts, carrots, parsnips, peas, rutabagas, summer squash, and turnips. Mushrooms are best stored in a paper bag in the fridge. The paper bag allows air to circulate.

Some vegetables such as spinach kale, chives, celery, leeks, need some moisture. Rinse under cool water and drain thoroughly and store in a plastic bag in the fridge.

The best way to store fresh herbs and water cress is with their stem in water and a plastic bag over the top and securing the bag to the water container.

White and red onions, garlic, potatoes, sweet potatoes, winter squash should be stored in a cool, dry and well ventilated place away from direct sun light. Tomatoes are also better off stored at room temperature.

Some of the Best Ways to Cook and Eat Vegetables

Some vegetables are best eaten row such as lettuce, carrots, celery . So enjoy them row. If it tests better row then that is the way to eat them.

The next best way to eat veggies without destroying most of its nutrients is steaming. You can steam most vegetables. Each vegetable has a certain period of time and temperature of steaming it.

You can also boil, roast, grill, or bake vegetables. One of the best ways to cook vegetables is roasting. Roasting preserves most of the nutrients and flavores of vegetables and is one of the tastiest ways of eating veggies.
