Timur or Szechawan Pepper

   I was introduced to this condiment last year during my trip to Uttaranchal-North of India. People out there refer this as Timur. After searching on net I found out that it is nothing but Szechawan pepper.
   
   I have seen Kylie Kwong using this pepper more often in her show on TV. How can we include the same in Indian cooking apart from salad dressings?

   My local Chinese restaurant does a mighty fine Szechuan Chicken. I found this recipe online, got to say though I have not tested it. OK not Indian cuisine but if it tastes anything like the one prepared by my Chinese friends you are in for a treat.

   I have some of that pepper and use it frequently and I love Szechuan Chicken, or pork. Good stuff.
