What do you cook low and slow

    I'm looking for more ideas for things to barbecue low and slow.  Any ideas?

      Ribs (pork or beef), Brisket, Chicken Half's, smoked salmon
      deer, ....you name it just about any thing can be done that way.

      Country ribs are sooo good and falling off the bones tender when cooked as slowly as possible.

      I want to try barbecuing something with hickory, and use sliced pears, honey, bbq sauce, on maybe something like beef ribs.

    A fresh ham would be great that way, add a little liquid smoke, some brown sugar, pineapple, and seasoning and you'll think you're in heaven.

    Goat meat!!! I have not done this yet, but I have a friend who has built an in-ground pit and smokes his Goat meat and it is Awesome this way.
    Cooking/BBQ/Smoking meat at a lower temp and slow seems to prevent the flavor from being cooked out of the meat. I prefer this method.

    Wow, goat meat.  I've never cooked it.  What does it taste like?

    I'm going to research ham and brisket.

      It has a taste between beef and Deer meat.  Better than beef, but not better than deer!

    To answer Paul's question about goat meat, the taste is somewhere in the center between lamb and venison - gamey, but in a really great way. It's my favorite meat, but your have to be quite careful about quality. Its awesome cooked on low heat!

    I'm not so sure on the goat meat.  Especially the kind that lives high in the rocks.  Seems like it needs to come from a place with plenty of grass or grain.

      lol, the goat meat I have eaten was raised in fields where grass is the main food. I would choose a goat from a goat farm.
      It is worth a try when cooked right, as any game meat is.
      I love goat meat!!!

    Not too sure about barbecue techniques but if you can cook in a pot on a barbecue, then  something based on the Greek (casserole style) Stifado recipe might be worth a try.

    Stifado is usually made with beef (or traditionally rabbit) and has small onions like shallots in it.

    The gravy/sauce is tomatoes and spices (it is quiet difficult to work out which ones, as each Greek island and even restaurant seems to have their own version of the dish.

    If you can get the cooking time long and slow on the barbecue as with a casserole style cooking (I usually make my version in a slow cooker) the meat soaks up the flavours of the sweet shallot onions, the tomatoes and the spices.
