HELP!!!

   I am making a pot roast for the first time today, I put a 3lbs roast in, then water and spices, celery, onion, carrots and potatos in that order. I got up a second ago to get a refill of my coffee and the potatos are spotted black!! It looks like mold to me or something but they were perfectly fine when I peeled and cut them up this morning. What is this? Is the whole roast bad?

   the spices you add might impart a color to the potatos if touching,... stir it, smell it, taste it,....if it seems fine then its fine.
   
   its hard to screw this sorta thing up,.... chances are you'l be fine
   
   if the potatos were exposed to air, they will discolor,... water needs to completely cover them to avoid this.

   DUH, OK LOL I knew this one and paniced apparently. Potatos oxidised....*spelling
   
   Potatos are usually fried, baked or mashed in my home, rarely are they exposed to the air longer than 6 minutes from peeling to cooking for them to discolor.
