    Hey Hubbers,

Every so often it happens, but it does happen.

I'll cook a meal and as you begin to eat the meal, you realize you've managed to cook your entire meal to perfection.

Last night I decided to have Corned Beef for dinner today and when I got up this morning, after taking care of personal things, I began cooking my Corned Beef.

I put it in water and cooked it low heat at 10am. I just ate dinner at 4:30 and as I am putting the dinner together on the table, I realized my Corned Beef could be cut with a fork. No knife required.

The potatoes I cooked were not over cooked so much they would be mushy, but were soft enough to easily slice through.

The Corned Beef was so juicy and with the potatoes, it was fantastic. smile

Have you done this before? (what food doesn't matter)

My "cooking moments" tend to happen when I am trying to use up odds and ends and hit on some combination that just works so well.

For example, before moving to Wales, I lived in Nottingham, where I was able to get organic vegetables boxes delivered. The box scheme allowed a certain leeway, but inevitably things arrived that were outside my comfort zone....

.... like beetroot, what to do?

I chopped it into small pieces and sauteed it with some onion and leek. Then I decided that the beet/leek flavours would be set off nicely by chick peas, so tipped in half a can. Then I thought it needed a bit of fire, so crumbled in a dried chilli pepper. And then came the moment of inspiration - Moroccan, I thought and chopped in half an orange, a couple of dried apricots and added a dash of ground coriander.

It was one of the nicest dishes I've had in a long time.

When I have the time, that is the way I love to cook. When I go to the supermarket, I always head for the area where they discount stuff near its sell-by date. When I get home, the fun begins, what to combine with what? I've had some great meals like that, which I would have never thought of otherwise.

Cooking like this means I surprise myself all the time. OK, some surprises are not too good, but on the whole I like them!

I cooked some fish once. The surprise was that the crucified result actually masked the taste of the fish, which wasn't all bad.

Just last night I was wanting to try something different and I made a Jack Daniels BBQ glaze to go on some boneless skinless chicken breast.  The recipe I found online called for 2 tbl spoons of JD and I thought who the heck are they kidding, I used an entire cup of Jack among some other spices such as garlic powder and cayenne pepper.  I almost never follow a recipe to the letter.  I also know that the way that I was preparing the glaze, the alcohol would evaporate but leave the flavor and aroma of the whiskey.  Now you have to be a Jackonian (a term my friends and I penned to identify with the love of Jack Daniels) to appreciate the full flavor of this dish.  The final product didn't turn out syrupy like the original recipe intended.  Mine turned out less thick and more like the consistency of olive oil.  My date was very impressed but I played it off like I knew what I was doing. smile

Neither do I! It makes cooking far more fun.

Although I must admit that my inability to stick to the book means cakes can sometimes be a total disaster lol

It is more fun smile Though I will admit I have yet to master the perfect fudge.  Almost every time I attempt it, the fudge mixture ends up becoming a layer for something else smile

Once in a while I score a perfect 10 - and it's such a great feeling.  A pot pie (which was heavenly), a pasta dish with artichokes, and one memorable Spanish Tortilla that actually didn't fall apart when I flipped it stand out in my mind.

Hey Cags, you surprise the hell out me, I had no idea you knew how to cook.

Don't mean to be a show-off but 99% of my meals turn out perfect. On Sunday I made fried chicken and paired it with a mango sauce I came up with on the spot. My fiance who hates dishes made with fruits ate most of it.

I'm usually okay with cooking, but baking is a major issue. I've ruined brownies more than once, for cryin' out loud. But a few weeks ago I was looking for something new to try and thought, "Heck, let's make a spice cake." So I tried it.... and it was good! I even frosted it and everything.

Baking is one thing I don't screw up too often.
Actually, the last set I made were slightly overcooked. lol But, I think that was the first time in about 30 or 40 tries. wink
      Spice cakes are yummy. smile

I could not believe how well I made instant coffee, when after many years someone finally told me that I should use a teaspoon instead of a heaped table spoon of coffee and use boiling water instead of coke!  roll big_smile
