Using Leftovers

    Hi, folks--
    It's me again..the wannabe experimental cook/baker.  wink

    What I would like to know this time is, can leftover cooked oatmeal successfully be used in cookies?  Or to you need to just use the dry oats?

      You can use leftover oatmeal for muffins but not sure about cookies.

        I fed my leftover porridge to my cats this morning - they loved it, and although it's not quite what you asked, it is a way of not wasting it. smile

          Really??!!  Well, I'll be doggoned!  I would not have thought cats would like oatmeal.. I'll have to offer mine some one of these days..but before I doctor it up for myself with brown sugar, of course...

      My family eats a lot of oatmeal when i have leftovers i turn it
      into bread or muffins but my brother is a baker and he had a recipe for leftover a friend pass off to him.

      Here's the recipe:
      Leftover Oatmeal Cookies
      2 c flour
      1 tsp baking powder
      1/4 tsp baking soda
      1 tsp salt
      1 tsp cinnamon
      1/4 tsp nutmeg
      1 c sugar
      2/3 c shortening (I use butter)
      2 eggs
      1 1/2 cups cooked oatmeal

      Sift dry ingredients together.  Add shortening & eggs and beat until creamy--about 2 minutes.  (It does eventually become creamy!)  Stir in oatmeal.  Drop onto greased baking sheets and bake at 375 for 12-15 minutes.  Makes about 4 dozen.

        Oh, thanks so much!  That does sound delicious!  I'm going to print that out, and I hope your brother doesn't get mad that you shared a "family recipe."  wink  ..or his friend's family, that is.......
