How do I know whether to use H2 or H3 headings for sub-titles in text modules? Is the font just different or does it produce different tags in the HTML code?
The font is different. In one hub where I had used both, I was even told by an editor that I should use the same font.
It's both. The font is different and the HTML code has different tags.
First of all, an H1 tag in the HTML is the main title for the page. The title of the hub in our case.
Subtitles are H2, which are created from headings of text capsules, headings of image capsules, and headings of callout capsules.
You can also force an H2 tag in text by using the format pull-down menu in a text capsule.
If you have the need for a section that is a subsection to a subtitle section, then you could use an H3 tag, but personally I don't like the font that HubPages uses for H3.
Search engines recognize the fact that H2 is a subsection to the H1 and H3 is a subsection to the H2, and so on.
So I often have long text capsules with subtitled sections. Most of the subtitles are just bolded paragraph style text.
Should I split up all of these subtitled sections into separate text modules, or replace the subtitles with H3 headings (without splitting the paragraphs?)
Yes, for SEO purposes, it has a better structure and search engines will be able to figure stuff out. Also there's a higher chance of something showing up on the knowledge graph when it immediately follows a header tag.
There you go. Brandon just gave you a perfect answer. But here's a little more to mull over.
Using H2 within a text capsule is the same as placing the subtitle in the title field of another text capsule, so that's up to you. The search engines see it the same way – as an H2 tag.
However, as far as bold text is concerned, if you want that section to be recognized by Google for possible Featured Snippets, or as Brandon said – knowledge graphs, then you should tag it as H3 instead of bold.

I've heard they slow traffic down although I have a few hubs with call outs that are doing well, so I'm not sure what to do. I hear some say they're fine and others that they are traffic killers. Would appreciate some advice from the staff, thank you.
