I love them hot, hot, hot!!! And gotta have tons of bleu cheese dressing to slather all over them. The best around these parts are from a restaurant called Archie Moore's. Fortunately, they've bottled their wing sauce so I can now make them at home!
I used to like hot but I can't handle it any more so I go for the flavored ones.
Yes, hot enough for steam to come out of my ears. There is a local place that, while not known for wings, does a habanero version that is awesome! Just have to make sure and double up on the beer at the table while eating them.
And to answer the question: Bleu Cheese, never Ranch.

the hotter the better. no cheese, celery, dressing, or any condiments. When I'm eating wings i dont want to stop and take a break and nibble on some celery. I want to dig in and stop when I'm done! The best is at BBQ/smokehouses. Gotta love the real smokey hotness.
A really awesome flavor pair is to mix 1/3 cup Frank's Buffalo Wing sauce, and 2/3 cup of ranch dressing in a zip-loc bag, add chicken wings or strips seal, and roll chicken around in the bag. put in a 400 degree oven for about 10 minuets (More or less as you like)and serve. This works especially well with leftover plain breaded wings or strips. I call it Buffalo Ranch round-up.
Wings to go is one of the best places around here. Their Buffalo wings are in multiple flavors like "Suicide", "Homicide" and the like. I like mine full of flavor, but not too spicy, and I love them with Fresh Blue Cheese, cold crisp celery stalks and carrots. Throw a few Dos Aquis, Coronas, or Heineken in the mix with them, and I'm in heaven!!!
Curl up in front of the TV and watch a good game, MMA match, or boxing match and I am a happy woman!
I will have to say my most favorite flavor or type of wings would be a Cuban or Peruvian Style wing. I love to marinade for 24 hours and then smoke/slow cook an entire chicken on the grill for 2 hours to give it that delicious smokey flavor. Beer can chicken is also a pretty good one too! Yummy! I will do that if I can't get to my favorite Peruvian chicken spot in NOVA (Northern Virginia)...
