This hub is written to provide recipes for the Dukan Diet to help anyone on the diet or who is thinking about starting Dr Pierre Dukan's highly successful weight loss formula the Dukan Diet. This diet is based around the principles of eating a diet which is low in carbohydrate but high in protein.

Dukan Diet Recipes - Beef Kebabs

The meat which is allowed on the Dukan Diet is lean beef and lean ham. Due to the higher fat content other pork products are not permitted and neither is lamb. The omission of lamb is a disappointment to me as I love lamb. However fortunately I'm also very partial to beef and ham and these are very versatile ingredients so there is absolutely no excuse for your meal times to be boring just because you are on a diet.

The meat recipes that I've found are

  • Beef Kebabs
  • Meatloaf
  • Steak
  • Beef Burgers
  • Luc luc Beef
  • Ham Soufflé
  • Fried Eggs with Sliced Ham
  • Ham and Egg Omelette

Beef Kebabs

14oz Beef fillet, cut into large cubes

¼ cup low-sodium soy sauce

2 tbsp Dijon mustard

1 tbsp cider vinegar

A little thyme and 1 bay leaf

Dash of vegetable oil

¼ cup fresh lemon juice.

Mix all the ingredients together and marinate the beef for 2 to 4 hours in the refrigerator. Discard the marinade.

Place the chunks of beef on the skewers Grill until cooked to your liking.

During the second phase or cruise phase you can add tomatoes, mushrooms, peppers and onions.

Remember if you use wooden skewers, you have to soak them in water first to prevent them from burning.

Dukan Diet Recipes - Meatloaf

Meatloaf

(Serves 6)

2lbs lean ground/minced beef

1 finely chopped onion

2 eggs, beaten

4 tablespoons non-fat fromage frais or yoghurt

2 sliced hard boiled eggs

Sea salt and freshly ground black pepper to taste

Preheat the oven to 180C/350F/Gas 4

Carefully mix the onion, eggs (not the hard boiled ones), fromage frais/yoghurt into the beef and season

Very lightly oil or spray a 2lb bread tin and dust with wheat branflour.

Add half the mix to the tin and level

Place a row of the sliced hard bolied eggs on top.

Add the remaining mix level off again

Bake for one hour

Empty out of the tin and leave to cool before slicing.


Dukan Diet Recipe - Peppercorn Steak

How you well cook your steak is a matter of personal choice but even on the Dukan Diet you don't have to have it plain.

The easiest seasoning is to cover the steak with freshly ground pepper before dry frying or grilling.

A couple of other alternatives are to cover the steak with Dijon mustard or a bouillon cube.

If you are on a day when vegetables are permitted, try dry frying some finely sliced onions, add your steak seasoned both sides with freshly ground pepper and cook until done to your liking. Remove the steak from the pan and add a tablespoon of low fat yoghurt to the onions and juices and serve on top of your steak.

Beef burgers

(Serves 4)

2lbs ground/minced beef

1 large onion coarsely grated

1 clove garlic finely chopped

2 eggs

Sea salt and freshly ground black pepper

Place the beef in a bowl together with the coarsely grated onion and finely chopped garlic, add the salt and pepper.

Mix until all the ingredients are evenly distributed.

Beat the eggs in another bowl and then add them to the other ingredients and stir the eggs into the mixture thoroughly.

Make your burgers by taking a handful of the mixture, roll it into a ball in the palm of your hand, and squash it flat to make a burger about 2cm thick.

Grill the burgers or fry in a non stick frying pan making sure that they are cooked all the way through and serve with plain yoghurt.

If you don't need to feed four people reduce the quantities of the ingredients or freeze the excess uncooked. Don't forget to defrost the burgers thoroughly before cooking.

Dukan Diet Recipe - Luc Luc Beef

Luc Luc Beef

(Serves 4)

14 oz Beef fillet cut into thin strips

1 large onion finely sliced (omit for protein only days)

1/4 cup Soy sauce

1/4 cup Oyster sauce

1" cube of ginger,finely chopped

2 crushed garlic cloves

Freshly ground black pepper (no salt needed)

Make a marinade by mixing the soy sauce, oyster sauce, ginger, pepper and garlic together in a bowl.

Add the slices of beef and leave for about one hour.

Dry fry onions until soft and add beef strips and cook together until finished.

Ham Soufflé

(Serves 2)

4 large eggs

6 slices of lean ham, chopped into small pieces

200ml skimmed milk

20g cornflour

400g fromage frais

Nutmeg, sea salt and freshly ground black pepper

Mix the milk and cornflour together

Separate the eggs

Beat the egg yolks together with the fromage frais

Add the eggs and fromage frais to the milk and cornflour and stir until thick.

Add the ham and seasoning.

Beat the egg whites and fold into the mixture.

Bake at 220ºC/200ºC fan/Gas 7 in a non-stick soufflé dish for 45 minutes.

Fried Eggs with Sliced Ham


(Serves 1)

2 eggs

2-3 slices of lean ham

Sea Salt and freshly ground black pepper to taste

Cut the ham slices into squares.

Break the eggs into a bowl (do not break the yolks) and add salt and pepper to taste.

Pour the eggs into a heated non stick frying pan and scatter the ham pieces over the egg whites.

This is really an omelette where you don't beat the eggs and get to have your egg yolks runny.

Ham and Egg Omelette

Follow the recipe above except you beat the eggs before adding the ham!

You can ring the changes by adding cheese or on the days that you are allowed vegetables add tomatoes or mushrooms.

Yes you are right. There are certain additional foods like cornflour that are not allowed until you reach the Cruise phase.

It won't be long before you'll be able to have the bread again though.

Very happy with the results of this diet, very tasty recipes. Such filling and satisfying food. After research I have found a few things I had been doing wrong such as dukan friendly bread that has cornflour in it in the attack phase, but will continue on as I am and cut it back out.. AWESOME diet though =)

It is fine to use green chillies and coriander as seasoning in the Attack Phase.

The sugar free reduced fat cocoa powder is quite difficult to find. Dr Dukan does sell his own cocoa powder and other makes can also be found online but availability will depend on which country you live in. For example in the US one of the brands is called Wondercocoa by Wonderslim.

Hi amber just wanted to know if we can use green chillies coriander in the attack phase. I enjoy it in a yogurt chutney with tandoori chicken! Also where can I get fat free cocoa for hot chocolate & mousse? I've checked all the supermarkets! Would you have a name for it! Thanks!

You can have fat free cheeses in Attack such as cottage cheese, quark, fromage frais or cream cheese.

You cannot eat starchy proteins such as chickpeas freely until you reach Stabilisation but you would be able to eat limited amounts of these types of protein in Consolidation.

I'm pleased you enjoyed this hub. A very similar recipe is listed in the UK version of the Dukan Diet book as a meat recipe for the Attack Phase (page 171)so I'd say yes.

The onion thing is one of those gray areas where in certain recipes you have to eat them such as the meatloaf recipe. Dr Dukan treats onions as an allowed condiment so you are allowed to eat them in small quantities but some people do choose to remove the onions where they can.

I have enjoyed eading your hub. thank you for all the information. My husband and I are in the 2nd day of the attack phase. It is going well. Just a quick question...the beef recipe that listed with oyster sauce - can that be used in the attack phase? And another question - can you "eat" onions in the attack phase or only cook with them? You are allowed to eat low fat lean ham which is 4% fat content or less with any fat or rind removed. You need to read the package to see how much fat it contained per 100g.

If you have made a mistake just put it behind you and continue as if nothing had happened.

Hi there,

I'm on day 2 of the attack phase, and in buying the packaged ham, then eating it, I've just noticed that it was Roast Pork Loin Ham. On the back it says "made with 115g of raw pork per 100g of roast cured pork loin". Worried I've screwed up... what do I do? :(

Instead of dry frying, I just add the tiniest bit of water and find I can fry that way (make sure you've got a really top notch non stick pan of course) Then no need for any oil at all.

Yes you can use sliced lean ham but you need to be careful with the fat content which is why it is better to buy packaged ham so you can see the fat content. Try to get ham with less than 4% fat content.

Hi! Thanks for the recipes! I'm in the attack phase, so can I still use sliced lean ham? The book says no cured or deli ham, but sliced lean ham says it is cured... Advice?

It is a diet which many people do find easy to follow and they are very successful. What I like about the recipes that I found is that there were good enough to eat if you weren't on a diet!

You need to dry fry whilst following the Dukan Diet. You can either use spray fat or put a few drops of oil in the frying pan and then wipe it over the surface of the pan using a fresh piece paper towel/kitchen roll.

Nice to meet you. I'm not aware of any specific trials or research concerning the Dukan Diet. It is a variation of a low carb, high protein diet and there is quite a lot of medical trials information on this type of diet on the internet if you are interested. Some of it supporting these types of diets and some of it not. My personal view is to find a diet which you can rub along with. Being obese is usually a more serious risk than being on a diet which is helping you to lose weight. But as I explained in my disclaimer anyone with medical problems of any nature should see and consult a doctor before embarking on any diet or exercise program and even if you have no known health problems, it is still advisable for you to consult your doctor before you make any major changes to your lifestyle.
