About Coconut

"He who plants a coconut tree, plants food and drink, vessels and clothing, a home for himself and a heritage for his children" - South Seas saying

"If you could count the stars, then you could count all the ways the coconut tree serves us" - Philippine proverb

These two proverbs say volumes about the multitude of benefits the coconut tree holds for us.

Latin Name : Cocos nucifera

Coconut is called 'Narial' or Copra in India.

Coconut tree is called the "Tree Of Life" in Philippines.

Coconut refers to the coconut fruit as well as the coconut tree. Coconut is believed to have originated in the Indo-Pacific region or the Southwest America. It grows in the tropical and sub tropical regions of the world.

The coconut tree is large and grows to about 100 feet in height. As the tree grows upwards, the lower, older leaves, keep falling off. Some dwarf varieties of coconut are also cultivated.

The leaves are large and pinnate and form a sort of crown on the head of the coconut tree. The fruit is a drupe composed of 3 layers - the outer fibrous layer constitutes the exocarp and the mesocarp and the hard innermost layer, called endocarp or the shell. The endocarp encloses the meat or flesh of the coconut. The meat or flesh is also called copra.

At one end of the coconut is the seed containing a single embryo. This end of the shell has 3 eyes which can be seen once the fibrous layer has been removed. When the seed germinates the roots push out of one of these eyes.

The coconut tree grows well in saline soils but in areas having good sunshine and rainfall like the tropical sea coastlines, which offer high humidity which is very necessary for the growth of the coconut tree. The coconut tree lives from about 80 to 200 years.

In India, coconut is cultivated in Kerala, Karnataka, Goa, Tamil Nadu and many other states.

About Coconut Tree Sap

Coconut tree sap is got by tapping the flower buds by making cuts. The sap is full of nutrients like aminocids, vitamins BComplex and C, minerals especially potassium and FOS , a probiotic ensuring digestive health.

A wide range of products like coconut vinegar, coconut nectar, coconut crystals andcoconut aminos seasoning sauce are made by either aging the sap for a long time or by evaporating the sap slowly at a low temperature.

Once a coconut tree is tapped, the sap flows continuosly for a period of about 20 years. The yearly yield of sap is about 5000 liters per hectare of coconut plantation.
Bamboo containers are used to collect the sap by tying them to the thick stems that carry the flowers.

In India,Toddy or Neera is produced from the sap by incising the flower clusters. Toddy when allowed to ferment by just leaving it alone becomes palm wine.
Arrack is distilled palm wine. In the Philippines, Arrack is called coconut vodka.

Nutrients In Coconut

Coconut meat contains excellent levels of copper, iron, manganese, good amounts of phosphorus, selenium, zinc and potassium and many BComplex vitamins like folates, B2, niacin, B1 & B6. It is free from cholesterol and is very low in sodium.

Most importantly it contains lauric acid, a saturated fatty acid no doubt but a medium chain one. This one factor is responsible for raising the HDL cholesterol levels, thus helping in preventing arterial blockages by fat.

Coconut water contains good levels of potassium and also is rich in electrolytes, minerals, simple sugars and more importantly the plant hormone and biochemical compound, Cytokinin along with a number of enzymes.

About Coconut Oil

Coconut oil is extracted from the flesh or meat of the mature coconut.
In India, coconut oil has been used since ancient times as a cooking oil, hair oil and Ayurveda has used it for its medicinal effects since thousands of years.
Traditional healers all over the world have been using coconut oil for healing since centuries. However, scientists and medical men in the West have just begun to unravel the miraculous healing benefits of pure coconut oil.

Traditional bullock driven coconut oil mill in Seychelles

Types Of Coconut Oil

There are 3 types of coconut oils each having its own uses and benefits.

  • Pure Coconut Oil

This oil is made by extracting it from copra or coconut kernels. It is a crude and unrefined oil and has no additives. The copra is compressed by the ancient practice of bullock driven mills. Power is also used to drive these mills. However bullock driven mills are preferred as no heat is generated due to their slow movement, thus retaining the nutrients and nutritional levels in their original state.

  • Refined Coconut Oil or RBD Coconut Oil

This is the most commonly available coconut oil being mass produced. It is extracted from the dried mature kernels or copra.

The process of manufacture of this oil involves refining, bleaching and deodorising the oil which is the reason for this oil also being called RBD coconut oil.. This oil is used for cooking as its smoke point is high.

The processing of this oil requires either heat application when it is extracted with a hydraulic press or enzymes to act on the coconut paste from which it is extracted. It is further refined by heating, filtering and hydrogenating to raise its melting point, especially needed in the warm tropical climes. Hydrogenation improves the shelf life of the oil.

Hydrogenation of the oil however causes the unsaturated fats to become saturated and some of the mono unsaturated and polyunsaturated fatty acids get converted into trans fatty acids. These trans fats are responsible for coronary heart disease as they raise the LDL or bad cholesterol and lower the HDL or good cholesterol.

Since RBD coconut oil is partially hydrogenated the trans fats are more harmful than the naturally occurring trans fats in other oils. When oils are fully hydrogenated no trans fats remain.

It is used in cooking and baking.

  • Cold Pressed Coconut Oil or Virgin Coconut Oil

It is made from fresh coconut meat by expeller pressing the grated coconut meat to get the coconut milk. When the coconut meat is centrifuged the oil seperates from the rest of the components.

It is the least processed and no chemicals are involved during any stage. It has the natural taste and odor of coconut.

Virgin coconut oil retains all its inherent nutritional components in full measure. The fatty acids remain unaltered and this is the reason for its wide ranging and powerful health benefits that no other oil offers.

In countries where coconut oil is being used plentifully since ages, like the South Pacific Islands, Central America, Asia and Africa, lower incidence of obesity and other health issues is observed than in North America and Europe where coconut oil is consumed sparingly.

Virgin coconut oil is used as a diet supplement, in smoothies, syrups, massage oils, hair and body oils, lotions etc.

About Organic And Extra Virgin Coconut Oil

A lot of debate and doubts exist on whether organic coconut farming is done or not and whether the processing of coconuts for producing coconut oil is done without the use of chemicals or additives.

Regarding the extra virgin tag there are no set standards for assessing the virginity of coconut oils. Reputed firms, coconut federations and government agencies etc in India, are tight-lipped about this issue.

Why Is Coconut Oil So Healthy?

If you have ever wondered how coconut oil which contains a whopping 90% plus of saturated fatty acids is so healthy. Consider the following facts :

  • Over 50% of the saturated fatty acid in coconut oil is Lauric acid. It is a medium chain fatty acid which has the property of not being circulated in the blood. It goes straight to the liver and gets converted to energy directly instead of getting stored as fat.
  • Lauric acid gets converted to monolaurine which is anti bacterial, anti viral, anti fungal and anti protozoal in action. Coconut oil derives all theses benefits from lauric acid.
  • Saturated fats are the most stable amongst monounsaturated, polyunsaturated and saturated fats. As fats in coconut oil are almost all saturated, the oil remains very stable and does not get oxidised easily. Free radical formation, a by product of oxidation, hence does not occur. Free radicals are the cause of heart disease, cancers and drop in immunity levels as well as causing a host of other illnesses.
  • Though lauric acid raises the total cholesterol level, most of this increase is in the HDL cholesterol or the good cholesterol levels. A lower total cholesterol to HDL cholesterol ratio is beneficial in avoiding heart disease especially atherosclerosis. This, coconut oil does effectively.
  • Human breast milk contains lauric acid ( 6.2% of total fat ).

To Summarise

Coconut and coconut oil is by far the most effective and healthy oil for consumption among all the oils that are used for cooking. Lauric acid is the fatty acid that is responsible for all the amazing health benefits accruing due to coconut oil consumption.

There is no recommended daily requirement for lauric acid as a guideline. Dr Mary Enig, PhD, nutritionist and biochemist and one the world's leading research authorities on fats and oils, suggests 10 to 20 gms of lauric acid a day for adults and growing children. This can be got from 1 tbsp of dried coconut. 60 ml of coconut milk will provide 3.5 gms lauric acid while 1 tbsp of coconut oil will provide 7 gms of lauric acid.

Based on this consuming 3 tbsp of coconut oil a day will provide the required quantity of lauric acid. This will protect against microbial infections, raise immunity levels, increase the metabolism, improve skin and hair condition and various other health benefits.

Just make sure you consume unrefined, cold pressed coconut oil, extra virgin in this case, to derive full benefits.

And yes, do not microwave EVCO or VCO as there are indications that there is loss of nutrients once this is done. Instead if needed, one can warm it just enough over a flame to melt it, not heat it.

Thank you for the great amount of info. It inspires many and removes the most costly myth that coconut oil is dangerous!

Sometime back, I read an article. A doctor of US could reverse her husband's serious Alzheimer's state in 34 days, with virgin coconut oil. After that I have started myself. Seen very good results in digestive, immunity and circulation systems. Seeing gradual changes for nervous system too.

It can be called as the best food that man can have, second only to mother's milk

Harsha Vardhana, you are absolutely right. Coconut oil's age old benefits are being recognised by the West now. It is an absolute wonder healing food. The myth that the saturated fat in it is harmful to health has been broken.

Thanks for reading and leaving this information.

Thank you, Rajan.

For Indians, foreign brands are very expensive

See if you can the following info too. http://www.maxcareindia.com/ - It is a Tumkur ( near Bangalore) based company. Currently they ship it to all over south India. Others need to contact them directly.

rajan jolly profile image

rajan jolly 4 years ago from From Mumbai, presently in Jalandhar,INDIA. Author

Harsha, foreign brands are expensive on 2 counts - the foremost being that they are internationally reputed brands. Most of these products are organic and then the cost of production and other expenses to get it to the consumer in our country, is far in excess than what we have here. This makes it all the more expensive for us here.

Therefore I gave the 2nd option which is by far cheaper.

I will be checking the link you have offered.

Thanks for the keen interest and your input.

Rajan, there are strong advices that VCO can lose much of its healing power if heated through microwave.

Any opinion from your side? If you believe, you can add a note/pre-caution. I believe most of the people turn to VCO due to medical reasons. So they may be disappointed due the effect of microwave effect

Maralexa, coconut is getting its long overdue recognition now. I've personally found coconut oil to control skin rashes and inflammations almost miraculously. Even when I didn't use VCO just pure coconut oil.

I am thankful for your visit, support and appreciate your wonderful comments.

Rajan, I have a query on the amount of VCO that is produced in a medium size coconut. Something like 10 ml for a 100 gms of fresh coconut. I need a fairly accurate figure.

For many, who believe VCO is too expensive, this info can be helpful to plan their coconut intake itself.

Thank you for a well written hub. I use coconut water as part of a Diabetes treatment as it re-hydrates better than other liquids. I also use the oil is essential oil massage blends.

Peter, consuming EVCO or VCO will definitely lower your sugar levels. Of course coconut water is an excellent natural rehydrator. And the oil also works well for a massage.

Thanks for sharing your thoughts. I appreciate the read and comments.

Victoria, this is so nice to hear. Yes coconut oil helps in many cases of allergies, rashes and inflammations too. Plus it has so many health benefits and though it has over 90% saturated fat it is a healthy cooking oil. In fact the healthiest.

Thanks, for your feedback. It will be an inspiration to many. Much appreciated.

As a true fan of "coconuts for health" there isn't much that could be added here. Very complete. Makes me wish I had some real coconuts now....but that's okay....I have the virgin oil.....I take it with me in the car and dip bagels in it for a snack while I am out on sales calls.

You certainly covered this topic well! You included so many facets of the coconut-I loved that! Voted useful and interesting, both. I'm a fan of coconut not only from a culinary influence but for health benefits, as well. I like the yehu and I'd never seen a coconut shell carved like that. Coconut shell buttons-love 'em. I've used them in a few of my craft projects. Again, great hub. I really enjoy reading it.
