I’ve been on the South Beach Diet for 4 months now and I’ve found a love for soy milk smoothies and success with weight loss. The smoothie recipes I am sharing are my own that I have created in my kitchen without a web site or recipe book. I prefer a sweet smoothie as an evening snack before bed. I use fresh fruit and frozen fruit depending on what I have in the house. The fruit is frozen most of the time though. I will buy fresh fruit and rinse, cut and freeze it myself so it lasts longer. I also let my smoothies set in the fridge for at least a half hour before drinking them so they thicken. I do not use dairy products because I am lactose intolerant. Feel free to substitute low fat milk for the light soy milk in these recipes. Experiment with different fruit combinations and ingredients. You’ll be surprised what actually tastes wonderful together!


Peanut Butter Knife

Phase 1 Peanut Butter Vanilla Smoothie

Serves 2

2 cups light soy milk

1 tablespoon organic peanut butter (creamy)

1 teaspoon vanilla extract

½ tablespoon artificial sweetener of your choice

Pour liquids first

Add peanut butter and sweetener

Blend well – approx 45 seconds on high

Pour in 2 glasses

Refrigerate

Serve topped with cinnamon and/or fat free whipped topping for variations.

Chocolate Banana Smoothie

Phase 2 Peanut Butter Chocolate Banana Smoothie

Serves 2

2 cups light soy milk

1 tablespoon peanut butter (creamy)

1 small banana

2 teaspoons sugar free chocolate sauce

Pour soy milk first

Add all other ingredients

Blend well – approx. 45 seconds on high

Pour in glasses and refrigerate at least 30 minutes to thicken.

Strawberries and Peaches

Phase 2 Strawberry Peach Smoothie

Serves 2

2 cups light soy milk

1 teaspoon vanilla extract

6 strawberries

1 peach – sliced to remove pit

1 tablespoon artificial sweetener (otherwise this smoothie can be bitter)

Add soy milk and vanilla

Pour in strawberries, peach slices and sweetener

Blend well – approx 45 seconds

Refrigerate at least 30 minutes to thicken.

Blueberry Almond Smoothie

Phase 2 Blueberry Almond Smoothie

Serves 2 (My ABSOLUTE favorite)

2 cups light soy milk

Approx 16 frozen blue berries

¼ cup dry roasted, unsalted almonds

1 teaspoon vanilla extract

1 tablespoon artificial sweetener

Add soy milk and vanilla

Add all remaining ingredients

Blend well – approx 60 seconds to get those pesky almonds

Disclaimer: This one will make little purple and brown things stick in your teeth from the blueberries and almonds. This is not a good first-date smoothie or take-to-work smoothie unless you have a toothbrush or toothpick.

Thanks :) It took me a while to like smoothies and now I cant get enough of them. As soon as I posted this hub I went and made the blueberry almond one. But I split it with my daughter so I wouldn't pig out!

...well I really do love smoothes and there are some really great (and new for me) recipes here to follow - and my own recipe to add yogurt, liquid honey and an egg to the fruit of your choice and juice base ......

Well hello my dear epi! Adding an egg and yogurt is an excellent way to add protein and dairy to your diet. I haven't thought about adding honey, sooo good! There's a local honeybee farm that sells homemade honey at our flea market and I just bought some. Is that the kind you would add?

Your hub is delicious! I have to say that the blueberry almond smoothie is my favorite too. I’ll only replace the artificial sweetener with honey and give it a try. Thanks for sharing!
