This simple vegan stir fry recipe is an excellent meal for vegans and non vegans alike, it tastes great, and has all the flavour of a stir fry to boot.

This brilliant vegan recipe is quick and simple, as well as easy to create in bulk. This makes it a perfect vegan stir fry recipe for a meal alone, or when catering for friends. However you decide to make it, you cannot help but enjoy this tasty vegan stir fry recipe!

Ingredients

You will need some basic ingredients for this tasty vegan stir fry recipe, and the are all easy to find!

  • 3/4 a Cup of Soy Sauce
  • 1/2 a Cup of lemon juice
  • 1 Tablespoon of grated fresh ginger
  • 1 Block of firm tofu sliced in to one inch cubes#
  • 2 Tablespoons of vegetable oil
  • 1/2 of a chopped cauliflower
  • 1 Bunch of chopped broccoli
  • 2 Sliced carrots
  • 1 chopped onion
  • 1 Sliced bell pepper
  • 1 Cup of peas
  • 1 Cup of thinly sliced mushrooms
  • 3 Spring onions thinly sliced (Scallions)
  • Vegan Noodles or Brown Rice

How to Make a Vegan Ginger Tofu Stir Fry

In a large, fairly shallow, bowl you will want to add your soy sauce, lemon juice and ginger. You will want whisk this until it is all well mixed, after which you can add the tofu to marinade, you should leave it for a minimum of one hour. Save the marinade from the tofu to use later!

After your tofu has been left to marinade you will want to start your vegan noodles or brown rice cooking, so it is fully cooked as soon as your vegetables are ready to add.

In a decent sized wok you should add the cauliflower, broccoli, carrots, onion, bell pepper and tofu. You will need to stir this frequently and cook it over a high heat for several minutes.

After you have stirred these ingredients for a few minutes add the peas, mushrooms, spring onions, and the left over marinade which you used for your tofu. You are basically looking for your vegetables to become tender, but not in the least bit mushy or soft.

If your brown rice or vegan noodles cooked too early and have gone cool. simply mix them in to the stir fry vegetables and tofu and heat until ready.

After this all you have left to do is serve out your delicious ginger tofu vegan stir fry and enjoy!
