Nuts, and seeds. My favorite is almonds, and pecans. Not only are they high in protein, they also help boost estrogen. Very helpful in midlife.
Pumpkin seeds, sunflower seeds, are also nutritious.
Peanut butter, although not a crisp snack, is also high in protein. Dip something crispy in it for a snack, such as celery, carrots, or apples. Add granola, or wheat germ, for added nutrition. Any nut butter will do, such as almond butter. Cubed cheese, along with these will add more protein.
Boiled eggs are high in protein, and may be added to a crispy salad, along with cubed meat, and cheese, both high in protein. Add a crisp cracker, on the side for extra crunch.
Yogurt, with granola, or wheat germ for crunch. Yogurt is a good source of protein, as well as probiotics.
