Christmas Stollen Recipe

5 ½ - 6 ½ cups King Arthur Unbleached flour

½ cup of sugar

1 ¼ tsp of salt

2 packages of dry yeast

2 eggs

½ cup of chopped walnuts

½ cup candied cherries

1 cup of dark raisins

½ cup of golden raisins

1 tbs of grated lemon rind

Combine milk, sugar, salt, & butter in saucepan

Bacardi Rum

Heat until bubbles appear around the edge. Remove from heat.

Cool to lukewarm

Measure warm water into mixing bowl

Sprinkle in yeast and stir to dissolve

Add lukewarm milk mixture & eggs

Add 3 cups of flour & beat until smooth

Soak raisins in rum or orange juice about ¾ cup

Mix in almonds, cherries, lemon rind & soaked raisins

Stir in 1 ½ cups of flour (Dough will be sticky)

Flour board with remaining flour

Turn dough onto board and mix until easy to handle, this makes a tender dough

Knead and then cover to rise for 1 ½ hours

Punch dough down, knead and divide dough in half

Shape into a 7 x 12 oval and brush with melted butter

Fold long side 2/3 across top of dough

Place on greased cookie sheet and cover and let rise for 1 hour

Bake 375 degrees 30-35 minutes but halfway through brush with melted butter top with candied cherries. Cool on wire racks and then drizzle with confectionary sugar and mixed Bacardi rum and orange juice.
