Can't You Taste it Now?


Hen and dressing with giblet gravy and cranberry sauce, spiral ham, yeast rolls, mac 'n' cheese, corn, sweet potato casserole with marshmallow topping, mashed potatoes, hashbrown casserole, green bean casserole, and of course a jar of homemade pickle...but that's not even counting dessert!

Granny moving to assisted living quarters didn't stop us from having our Christmas feast in the least! We just moved it to the fellowship hall and helped with the cooking. Of course, Granny still insisted on doing her main dishes, and we agreed--because part of that was what made "Granny's" Christmas, Granny's Christmas. I don't know how she did it and for as long as she did it, but that lady could cook circles around most women. And up until the time she went into assisted living, she did all this herself! I can only aspire to be that kind of Granny someday.

Just to get Started--Appetizer Ideas

Chocolate chip cheese ball--Cousin Shelley Taylor brings this, and it is scrumptious. Like a cheese ball, only sweeeet! Use graham crackers instead of club. One 8 oz. pkg of Philadelphia brand cream cheese, softened, 1/2 cup of butter softened, 1/4 tsp vanilla, 3/4 cup confectioner's sugar, 2 tbs brown sugar, 3/4 cup mini semi-sweet chocolate chips, 3/4 cup finely chopped pecans. Beat cream cheese, butter and vanilla until fluffy. Gradually add the sugars. Beat until combined. Stir in chocolate chips. Cover and put in fridge for 2 hours. Take out, shape into a ball, roll ball in pecans. Keep in fridge until ready to serve and serve with graham crackers.

Cheese Ball--Sister Kerry Pledge makes. Two 8 oz. pkgs of Philadelphia cream cheese at room temperature, 1/2 cup sour cream, 1 small pkg of Hidden Valley Ranch dressing mix dry. Mix all ingredients. Chill for 10 minutes. Shape into a ball. Roll in pecan chips and serve with wheat crackers.

Deviled eggs-- Boil a dozen eggs. Halve and scoop out insides. Mix yellows with a little sweet pickle relish, Miracle Whip, and don't forget the paprika!

Harry and David cheese spread with Fritos Scoops--One jar of Harry & David Sweet Onion Relish mixed with 1 block cream cheese. (A variation of traditional Southern Pimiento & Cheese)

How Southern Are You?


Easy Breezy Ham

The important thing to remember is to buy a quality ham such as Clifty Farms. You will want to pour about 2 inches of Coca-Cola over it. Not Pepsi. Not RC. Not pop. But Coke. Bake as package directs.

Aunt Ramona's Hashbrown casserole

1 tsp. of salt3/4 chopped onion1/2 cup of real melted butter1 can cream of chicken soup12 oz. shredded Velveeta cheese26 oz. frozen shredded potatoes8 oz. sour cream (Turner)2 cups of crushed corn flakes Put potatoes in baking dish. Mix ingredients and pour over potatoes. Top with crushed corn flakes and melted butter. Bake at 350 degrees for 45 minutes. "Some tips I do - I use a whole onion, that I puree so the children can't see the onion. I also use more than 2 cups of crushed corn flakes. I only use Orida shredded potatoes." (Aunt Ramona)

Broccoli and Grape Salad


Traditional Greenbean Casserole--Directions on the Fried onion can. Use Campbell's cream of chicken or cream of mushroom soup.

Cranberry Sauce

Good Old Southern Cornbread Dressin'--4 cups of cornbread/biscuits, half a teaspoon sage, 1/4 teaspoon of salt, 1/4 teaspoon of pepper, 1/4 to 1/2 cup margarine melted, 1/2 cup of broth from chicken, 1 teaspoon chopped onions. Mix together. Bake. (I will have to check on the temperature and time for this. Granny's gone, and that's all the recipe says).

Coconut cake

Pecan pie--My favorite of all Granny's desserts. I wish I had one now. 3 eggs, 3/4 cup white Karo syrup, 1/4 tsp salt, 1 cup sugar, 2 tbs butter, 1 tsp cornmeal, 1 tsp flour, 1 tsp vanilla, 1 cup pecans. Blend well. Pour into unbaked pie shell. Bake at 350 degrees for 25 to 30 minutes.Granny's Pecan Pie

Chocolate cake--Aunt Ramona's chocolate cake will make your tongue slap your brains out, it's so good.

Mama's Christmas Fudge My dearly departed mother's peanut butter fudge recipe. Divine!

Caramel apple salad-- Mix cup up red and green apples, Snickers candy bars, a package of dry vanilla pudding, and a tub of cool whip. *Got the recipe from the Cool Whip book at the shown in the Amazon module.

Oreo truffles-- I just learned this recipe. I will have to add it this year. One package of oreos crushed and mixed with 1 block of cream cheese. Form into balls, refrigerate for an hour. Dip into chocolate almond bark. Refrigerate. Keep in closed container. Recipe from Cousin Megan Graves who has some luscious cream cheese-filled strawberries on her blog. Megan's Recipes

Does anyone have Grannies receipt for Cranberry Sauce Relish It has whole cranberry sauce, respberry or orange jello, chopped nuts, cocoanut and a few other things, but I can't find the receipt! Please help!

Not sure if this is the one, but try it.

2 cans cranberry sauce with whole cranberries

1 (3 oz.) pkg. raspberry Jello

1 sm. can crushed pineapple

1 c. sugar

2 c. coconut

2 c. chopped pecans

1 tsp. lemon juice

Dissolve Jello in cup of hot water; let cool. Add pineapple, cranberries, sugar, coconut and pecans. chill and serve
