I remember as a kid growing up every thanksgiving we had a very big feast were my parents would cook a really big turkey, but after that big tasty meal we had turkey sandwiches for days, so today I want to share a recipe with you that will give your turkey a new twist ......It's a turkey enchilada and if you have a hour you can have this great tasting dish on your table for your family and friends to enjoy,
This is really a simple recipe all you need is.
2 cups of cooked turkey
1 1/2 cups of shredded cheese ( I used Colby and Monterrey jack divided )
1 1/4 cup of your favorite sour cream
1 cup of your favorite thick and chunky salsa divided
1/4 cup of chopped cilantro
1 tsp, ground cumin
10 flour tortillas ( 6 inch )
1 tomato chopped
Directions
Heat oven to 350 degrees, combine turkey, 1 cup of each cheese and sour cream, 1/4 cup salsa, cilantro and cumin.
Spoon about 1/4 cup of the turkey mixture down the center of each tortilla; roll up, place seam side down. in a 13x9 inch baking dish, top with remaining salsa and cover.
Bake 30 minutes, sprinkle with remaining cheese, bake uncovered for about 5 minutes or until melted, Top with cilantro, tomatoes and remaining sour cream ......then serve.
