Turkey Enchiladas

I remember as a kid growing up every thanksgiving we had a very big feast were my parents would cook a really big turkey, but after that big tasty meal we had turkey sandwiches for days, so today I want to share a recipe with you that will give your turkey a new twist ......It's a turkey enchilada and if you have a hour you can have this great tasting dish on your table for your family and friends to enjoy,

This is really a simple recipe all you need is.

2 cups of cooked turkey

1 1/2 cups of shredded cheese ( I used Colby and Monterrey jack divided )

1 1/4 cup of your favorite sour cream

1 cup of your favorite thick and chunky salsa divided

1/4 cup of chopped cilantro

1 tsp, ground cumin

10 flour tortillas ( 6 inch )

1 tomato chopped


Heat oven to 350 degrees, combine turkey, 1 cup of each cheese and sour cream, 1/4 cup salsa, cilantro and cumin.

Spoon about 1/4 cup of the turkey mixture down the center of each tortilla; roll up, place seam side down. in a 13x9 inch baking dish, top with remaining salsa and cover.

Bake 30 minutes, sprinkle with remaining cheese, bake uncovered for about 5 minutes or until melted, Top with cilantro, tomatoes and remaining sour cream ......then serve.

I'm really sure your family and friends will love this dish so come on and use up that left-over turkey and make every body happy.....enjoy.

I love enchiladas but have never used turkey before! I think I just have never let the leftovers have that long for me to think about it. One thought would be to change the cheese to queso enchilado or chihuahua cheese. Sounds yummy.

Changing the cheese would be great there are so many way to make enchiladas, thanks I will try that myself.
