Wedding Cupcakes are all the Rage
Once we looked at the cake budget wedding cupcakes became a really great idea. when the local discount store offers 10 cupcakes for $5.00 how could we pass that price up. If you have priced cakes you know $3.00 per serving is a completely competitive rates in the wedding cake world; so a small cake could be upwards of $60.00 or more.
With so many people on a tight budget it is not a big surprise that cupcakes are a big hit at weddings and other special occasion parties. With so many variations available and the do it yourself prospect of this wedding food it seems it may be the perfect fit. Cupcakes can be dressed up or dressed down for any occasions but one thing remains the same the price is low and the taste is great. Oh did I mention no one has to stand and serve these tiny packages of sweet goodness?
No matter how you look at it cupcakes are here to stay.
Saving us time, saving us money and saving us the extra help of serving these delicious treats I'm thinking my next get together is going to include color coordinated cupcakes for sure.
Like Wally World's Whipped Buttercream Icing
Whipped Buttercream Icing
2 cups butter
2 cups sifted powdered sugar
2/3 cup sweetened condensed milk
2 large egg whites
1/2 cup sifted powdered sugar
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
Put butter in mixing bowl, add 2 cups powdered sugar; mix at low speed until smooth paste. Whip at medium speed, adding the condensed milk until light & fluffy.
Using another bowl and beater, whip the egg whites until stiff while adding the 1/2 cup powdered sugar slowly. Mix this slowly into the above batter.
Add vanilla and remaining 1/2 cup powdered sugar. This last amount of powdered sugar can be doubled if stiffer icing is desired.
- 3 cups cake flour sifted
- 2 1/2 teaspoons baking powder
- 2 eggs
- 1/2 teaspoon salt
- 1 3/4 cups granulated sugar
- 2/3 cup butter or margarine
- 1 1/2 teaspoons pure vanilla extract
- 1 1/4 cups milk
Makes: About 12 cupcakes
Each cupcake serves 1 person
Preheat oven to 350°F. Grease bottom of two 8-inch round cake pans and line with waxed paper or parchment paper. Sift together flour, baking powder and salt; set aside. Cream sugar and butter together until light. Add eggs and vanilla to creamed mixture and beat until thoroughly mixed. Add flour mixture to creamed mixture alternately with milk, beating well after each addition. Continue beating one minute. Pour into prepared pan. Bake 20-25 minutes or until toothpick inserted comes out completely clean. Cool 10 minutes in pan on rack; remove and cool completely before decorating and have fun using all kinds of icing and flavors.

- 3/4 cup (1 1/2 sticks) butter or margarine
- 3 eggs
- 1 1/2 cups granulated sugar
- 2 teaspoons pure vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups water
Makes: 12 standard cupcakes
Each cupcake serves 1
Preheat oven to 350°F. Melt 1 cup chocolate chips and butter together either in microwave oven or on top of range over low heat. Stir until chocolate is completely melted. Pour into electric mixer bowl. Add sugar; beat until well blended. Beat in eggs, one at time. Add vanilla. Stir in 1/2 cup flour, baking soda and salt; mix well. Add remaining flour and water; mix until smooth. Pour into prepared pan. Bake 20-25 minutes or until toothpick inserted comes out clean.
Evenly sprinkle remaining 1 cup chocolate chips over cupcakes; let stand 2-3 minutes or until chips have softened. Gently spread melted chocolate over top of cupcakes. Cool 10 minutes in pan on rack; remove and cool completely before decorating and have fun with the many decorative edibles there are you can use for all your special occasions.
Make a Cupcake Stand
You can make a cupcake tower or stand out of anything really. There are endless possibilities.
1. Decide on your shape for your cupcake stand.
2. Decide on the number of tiers for your cupcake stand.
3. Use a guide to make sure your tiers are perfectly round square or what ever the shape of choice is. Cut all your tiers out first making sure you have enough support for the number of tiers you use. You can make the top middle and bottom three or six different sizes it's really up to your imagination.
4. Assemble your tiers with a separator of your choice this can be wood, plastic, plastic cups, ice cream bowls (pictured at the right) or what ever great idea you may have.
5. Test your cupcake stand before your event.
6. Don't forget to take lots of pictures and have a great time.
