Memaws homeade cornbread
57Ok, so I know this recipe is called "Memaws Homeade Cornbread" but really it's not memaws at all. Infact my mom can't even cook! Or should I say, she just refuses to cook because she knows either my dad or myself will prepare all of the cusine for a house of 7!! Anyway this recipe is awesome! Now I know I say that about all my recipes, but really it's just true (lol)....
Ingredients:
1/2 cup Butter (earth balance)
1 cup Buttermilk ( see tip below for vegan buttermilk)
1 tsp Vanilla extract
2/3 cup Granulated sugar
2 Eggs (see egg replacer below)
1 cup Spelt flour
1 cup Corn meal
1/2 tsp Baking soda
1/2 tsp Salt
Method:
- Pre-heat oven to 375 degrees F. Grease a baking dish
- For Vegan buttermilk, add 1 tblsp apple cider vinegar to 1 cup soymilk. Set aside for 10 mins.
- For Vegan egg replacer, use 1/2 cup silken tofu.
- Melt butter in microwave safe bowl. Add sugar, vanilla extract and beat in the eggs.
- Combine the buttermilk with the baking soda.
- In a large bowl, whisk the spelt flour, cornmeal and salt to buttermilk and baking soda mixture.
- Now add the melted butter and sugar mixture. Whisk or beat untill well combined.
- Bake for 30-40 mins at 375 degrees F untill toothpick inserted comes out clean.
