Sauteed Mushroom Stroganoff Recipe

Ingredients

  • 1 pound fresh mushrooms, small or medium sized
  • 3 tablespoons of butter
  • 1 small onion, diced or minced
  • 1 cup sour cream (use regular or reduced fat, do not use fat free)
  • 1/4 cup fresh parsley, chopped
  • 8 ounces pasta (any shape or variety)

Directions

Preheat oven to 350 degrees. Cook pasta according to package directions and drain. Thoroughly clean mushrooms and pay dry. Melt butter in a large skillet. Add mushrooms and onion, and sauté until browned. Place cooked pasta, mushroom mixture, and all other ingredients in a 10 X 13 casserole dish. Bake 20 minutes or until hot and bubbly.

Variation: This is a good white or portabella mushroom recipe, depending on your personal preferences. You can slice mushrooms if preferred. If the mushrooms are large, it is a good idea to slice them.

Snow Peas With Mushrooms Recipe

Ingredients:

  • 1 pound fresh mushrooms, sliced
  • 1 small onion, diced
  • 2 tablespoons of butter
  • 1 8 ounce package of frozen snow peas
  • Salt and pepper to taste

Directions:

Cook frozen snow peas according to package directions. Melt butter in a large skillet, add mushrooms and onions, and sauté until browned. Add snow peas to skillet after onion and mushrooms are cooked, and add salt and pepper to taste.

Marinated Mushroom Recipe # 1

  • 1 pound fresh mushrooms, medium sized
  • 3/4 cups extra virgin olive oil or grape seed oil
  • 1/4 cup lemon juice
  • 1 teaspoon basil
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of celery salt
  • Salt and pepper to taste

Directions:

Thoroughly clean mushrooms and pat dry. Combine oil, lemon juice, spices, salt, and pepper in a bowl with a lid that seals tightly and whisk until well combined. Add mushrooms and stir to cover. Place lid on bowl and refrigerate for several hours before serving, preferably overnight. Stir several times while the dish is marinating. Serve cold.

Marinated Mushroom Recipe # 2

  • 1 pound fresh mushrooms, medium sized
  • 2/3 cups canola oil or extra virgin olive oil
  • 1/3 cup of vinegar
  • 2 teaspoons of oregano
  • 1 teaspoon of basil
  • 1 teaspoon of salt

Directions:

Thoroughly clean mushrooms and pat dry. Place mushrooms in a 10 X 13 casserole dish (that has a lid) in a single layer. Combine oregano, basil and salt in a separate bowl. Sprinkle over mushrooms. In a medium saucepan, heat oil and vinegar to boiling. Pour over seasoned mushrooms. Seal dish and place in refrigerator. Marinate for several hours prior to serving, ideally overnight. Serve cold.
