5 Delicious Italian Recipes

Italian dishes are the most sought after cuisines. Here are 5 easy to make Italian recipes; each would hardly take few minutes of preparation.

3. Mixed mushroom Pasta

Ingredients:

Dried Porcini mushrooms

Fresh mushrooms (Portobello): chopped

Pasta

Olive Oil

Garlic cloves : 2, chrushed

Salt and Pepper : to taste

Butter

Red Pepper Flakes

Tomato Puree : 2 cups

Preparation:

Cook the pasta in adequate salt water. Drain off the water when cooked.

Cook the dry Porcini mushrooms in one cup water. Drain off the water and slice the cooked mushrooms.

In a pan, add oil and heat. Fry the cooked Porcini mushrooms, chopped fresh mushrooms and crushed garlic until the mushrooms turn golden brown and soft. Add tomato sauce, salt and pepper and cook for few minutes. Before removing from heat, add fresh Parsley and butter.

Transfer the cooked pasta to a serving bowl. Top it with the above sauce.

1. Pasta Con Pomodori Secchi / Pasta with sun-dried tomatoes:

Preparation Time: 10 minutes

Cooking Time     : 20 minutes 

Ingredients: 

Spaghetti                          :  400 g

Sun-dried tomatoes *       :  100 g

Garlic                               :  2 cloves

Basil

Oregano

Hot pepper                        : 1

Parsley                              : 1 bunch, chopped

Olive Oil

Salt                                    : to taste 

Shred the tomatoes. In a skillet, heat few drops of oil. Cook the tomatoes in it for 3-4 minutes. Then add red pepper, basil, garlic and salt. The sauce is now ready.

Cook the pasta in salted water. Drain off the water when perfectly cooked and transfer it to a serving bowl. Pour the tomato sauce over it and decorate it with minced parsley and oregano. 

You can also add cooked prawns to this to enhance the taste. 

*Sun-dried tomatoes are tomatoes that are naturally sun-dried with optional herbs. They can be home made and they add a different flavor to the pasta. This conventional method takes one week to two weeks time, depending on the weather condition and hence is replaced with an oven or a dehydrator, reducing the drying time to just few minutes.

2. Rigatoni with roasted vegetables:

Ingredients:

Mixed vegetables roasted in Olive oil

Garlic                               :  2 cloves, chopped

Basil

Red pepper flakes

Pasta

Olive oil 

Preparation: 

Boil the pasta in adequate salt water. Drain off the water when it is cooked, reserving a cup of pasta water aside. Return the pasta back to the pot.

In a sauce pan, heat the oil, and then add the chopped garlic cloves and the red pepper flakes. Remove the pan from heat.

To the pasta, add garlic and chilly flakes in oil. Turn on the heat, adding the pasta water if it is getting too dry.

Decorate with basil leave while serving hot. 

You may also add tomato sauce. 


5. Pizza marinara:

Ingredients:

Bread Flour : 2 – 3 cups

Dry Yeast : 2 tsp

Luke warm water : 1 cup luke warm

Sugar : 1 tsp

Salt : 1tsp

Fresh tomato/ Pizza sauce

Grated Mozzerella Cheese

Oregano

Olive Oil : 1tsp

Preperation:

To a bowl of luke warm water, add yeast and leave for 5 minutes.

Then mix in sugar, salt and oil and stir well.

To this, add enough flour to make a smooth dough.Kneed well and leave aside for few minutes.

Roll the dough and leave side for 10 minutes. Then brush it with few drops of oil. Add cheese and other toppings on it and place in a pre-heated oven for 20-30 minutes at 410 degree F

BOUN APPETITO!

4. Shrimp Scampi:

Ingredients

Shrimps

Olive Oil

Garlic cloves             : 4 cloves

Parsley

Lime Juice                 : 2 tbs

Dry white wine          : 2 tbs

Butter

Salt and Pepper          : to taste

Red pepper flakes 

Preparation: 

In a frying pan, heat oil. Fry the shrimps until it changes colour to pink. Then remove them from heat.

In the pan, now heat butter. Add crushed garlic cloves until fragrant. Then remove from heat and add wine and lime juice. To this, add red pepper flakes, parsley, salt and pepper. Turn to the heat, adding the fried shrimps to the ingredients in the pan. 

You may also garnish with chopped tomatoes.
