You can move to a vegetarian diet much simpler than you may think. If you do not want to make the move all at once then do so gradually.
Start with on meal a day, which one is up to you.
Breakfast:
This may be the easiest. A dry cereal, such as Cheerios or Shredded wheat, with a bit of honey (optional), some seasonal berries (blueberries, raspberries Strawberries) or a handful of raisins pour on some rice or soy milk add a slice of organic whole wheat or seven grain bread and a smear of peanut butter and you are set.
A smoothie is another great and easy to make vegetarian breakfast choice
Breakfast Smoothie;
Ingredients:
1 cup soy or rice milk, use skim milk if you prefer
4 ice cubes
1 tsp wheat germ
1 banana I freeze bananas just for smoothies.
¼ cup seasonal fruit (I usually use berries but any fruit will do)
1 tsp organic cocoa powder (optional)
A dash cinnamon
Preparation:
Put ingredient in blender and blend until smooth.
Pour in large glass and enjoy.
Lunch:
Never underestimate the possibility of the sandwich. The right bread choice when combined with fresh ingredients can make a complete meal that is great to take to work or school.
If you have a thermos you can take a soup or stew for lunch. Once you know how to make a simple vegetarian stock it all begins to fall into place from there.
Vegetarian Soup Stock:
Ingredients:
4 celery stocks, sliced
1 medium cooking onion slice
6 cups of water
Dash of sea salt.
Preparation;
Add water to soup pot
Add vegetables and sea salt
Bring to a boil, let cook for one hour
Drain in colander
To turn this into soup put the stock into a soup pot and add diced carrots and a handful of rice and you are set.
If you have a slow cooker, the possibilities grow. They are worth the few bucks because they can save you time and money as well as providing you and yoru family with some great vegetarian dishes.
Supper:
The stir fry is another cooking style that was meant for vegetarians. Simple dice or slice the vegetables of your choice toss them into a hot wok and within minutes you have a dish that can served with rice or noodles.
Tofu Stir Fry:

Equipment:
Steamer
Fry pan or wok
Sharp knife
Ingredients:
1 block 225 g, firm tofu, diagonally sliced
2 small carrots diced
1 medium onion diced
1 cup broccoli sliced.
Sea salt and black pepper to taste
Butter ( 1 tsp).
Preparation:
Add butter to fry pan or wok
Let melt
Add tofu
Put sliced broccoli into steamer on high.
After tofu begins to brown, flip.
Add carrots and onions
Cook 4 minutes.
Broccoli is ready when tender
Salt and pepper taste.
There is nothing tricky to vegetarian cooking and the variety of recipes and foods that are available will delight you, so go ahead enjoy. Start small and grow as you learn.

Hi Bob, you left out steaming vegetables! Now you can add to your hub. A long time Southern vegetarian meal consists of fried okra, fresh creamed corn, sliced tomatoes and green beans. This one goes back generations in my family. Your recipes look great and I'll give them a try.

Bob, I put together the chili in the video, with a few minor adjustments using what I had on hand. I added a 16 Bean soup thing, etc. It was outstanding! Even my carnivore son was pleased! Thanks for the Hub.
