Austrian Shortbread Cookies (worlds best)
I make these shortbreads year round. They are really easy and freeze well. I just dress them up for my Christmas cookie platter. Red and green glazed cherries cut into 8th look great.
- 1 pound good butter
- 10 tablespoons fine confectioner's sugar
- 3 1/4 cups cake and pastry flour
- 2 drops of vanilla extract
- candied fruit or other garnish
Methodology
Combine all the ingredients and mix vigorously. The butter should be quite soft so that air can be worked into the mixture. Roll the dough into 1 inch balls and place them on a parchment lined cookie sheet. Squish down with the bottom of a glass, and press the candied fruit or other garnish firmly into the cookies. Bake at 350 degrees until the edges of the cookies just begin to brown. 7-10 minutes just being a guide line. I bake mine for a bit longer as I like them to have a bit of a golden color to them. Allow the cookies to cool on the sheet for a while before attempting to remove them.

Hi Habee, I'm not sure about the Scottish shortbread because I never made any. (Don't you need to cut Scottish shortbread into wedges after it's been baked?)
This recipe is one of my Granmas. It's written in her own handwriting on a piece of yellowed graph paper. I had to translate it from Hungarian and it's called Austrian shortbread. This is one of the cookies I remember making with my Mom even when I was a little girl and we always called them "MomsMom cookies". I was really thrilled when I found the original recipe in between the pages of her cookbook.
