Appetizer
For those of you who like beans, I thought I'd share this recipe that's been in my family for quite some time. It can be made for a small group, or, you can double it for a larger crowd.
Ingredients:
1 can (16 oz.) refried beans
1 container sour cream (8-12 oz)
1 package Hidden Valley Ranch Mix
1 jar of your favorite salsa (12 oz.)
Sargento shredded 4-Blend cheese (1 package)
Directions:
Empty refried beans into a casserole dish, mash, spreading evenly to cover the bottom.
In a separate bowl, mix the Ranch dip with the sour cream
Once blended, layer the Ranch dip and sour cream mixture evenly over the beans
Pour the salsa over the Ranch dip and sour cream and again, spread evenly.
Finally, sprinkle the 4-blend cheese over the top.
Refrigerate for about an hour, then serve with tortilla chips or your favorite dipping chips and enjoy.
Main Dish
This recipe is my daughter's creation. It's quick, easy, healthy and extremely tasty. Serve with a nice vegetable or a lovely mixed green salad.
Ingredients:
1 whole green pepper
1/2 white onion
1 package (approx. 1 lb.) thin sliced chicken breast
2 tbsps. butter
Pinch of Adobo
A shake or two of garlic powder
Morton's Lite salt to taste
Sprinkle or two of Mrs. Dash (original recipe)
White rice
Directions:
Melt butter in large frying pan or, if you prefer, spray pan with I Can't Believe It's Not Butter
Cut up chicken into bite-size pieces
Add chicken to the pan and saute for a few minutes
Add all other ingredients and stir occasionally until chicken is done.
Prepare your favorite brand of white rice.
Once done, dish out on a plate and put the chicken mixture on top, or, you can mix it all together.
If you want a larger quantity, simply double the recipe. Enjoy.
NOTE:
As you can see in this picture, if you don't care for green peppers, you can pretty much add vegetables of your choice. I'd suggest you try this version first before making that decision :)

Oh my,,I'm sorry to hear that. Perhaps you have friends or family in the US who could send it to you, but I don't know how costly or feasible that would be. That kind of surprises me though, as we have stores here that sell products from India. I guess there are no stores there that sell American fare?

I love Adobo, some of it seems to sneak into many meals around here. I tend to find a favorite spice and it's the one I grab...and I am a forever fan of I Love Lucy!! I'm doin' that bean dip tomorrow!! Just cooked some beans today!!

Adobo is just an all-purpose seasoning.made from a blend of spices, such as garlic, salt, pepper, and adds a kick to the meal. It is a great flavor and can be used in most anything. The flavor is strong enough that you can notice it, but does not leave your mouth on fire, as it is not as spicy as heartier spices such as chili powder.

These...and so many other recipes on HP...sound divine...but since often a lot of the ingredients aren't available in India, I have to content myself with merely drooling over them!
