A Not So Shrimpy Flavor: Lemon Garlic Shrimp in Butter with Steamed Greens

Sleeping Shrimp....

 This is a shrimp recipe with great flavor.  It is heated in butter, lemon juice and garlic and laid to rest on a bed of steamed arugula and spinach.  It is delicious, and a nice light lunch or supper.

Ingredients:

  • Frozen Shrimp
  • 5 Tbs. Butter
  • 1 clove of garlic
  • Juice from half a lemon
  • Arugula and Spinach
  • Chicken Broth
  • Pepper
  • Salt

Directions:

  1. In a medium skillet, melt 4 Tbs. butter.
  2. Squeeze lemon juice into pan until the juice is almost gone from the lemon half.  Set lemon aside.
  3. Chop garlic and add to pan.
  4. Add shrimp.
  5. Pour enough chicken broth over the shrimp to moisten all of them.
  6. Add a generous amount of pepper or garlic pepper.
  7. Cover and let simmer until shrimp is warm.
  8. For steamed greens, melt 1 Tbs. butter in a saucepan.
  9. Add two heaping handfuls of greens to the butter.
  10. Moisten greens with chicken broth.
  11. Sprinkle with salt.
  12. Cover and let simmer for several minutes, until greens are completely wilted.

**Top with sunflower nuts for an extra crunch and a nutty, salty flavor!!**
