Sleeping Shrimp....
This is a shrimp recipe with great flavor. It is heated in butter, lemon juice and garlic and laid to rest on a bed of steamed arugula and spinach. It is delicious, and a nice light lunch or supper.
Ingredients:
- Frozen Shrimp
- 5 Tbs. Butter
- 1 clove of garlic
- Juice from half a lemon
- Arugula and Spinach
- Chicken Broth
- Pepper
- Salt
Directions:
- In a medium skillet, melt 4 Tbs. butter.
- Squeeze lemon juice into pan until the juice is almost gone from the lemon half. Set lemon aside.
- Chop garlic and add to pan.
- Add shrimp.
- Pour enough chicken broth over the shrimp to moisten all of them.
- Add a generous amount of pepper or garlic pepper.
- Cover and let simmer until shrimp is warm.
- For steamed greens, melt 1 Tbs. butter in a saucepan.
- Add two heaping handfuls of greens to the butter.
- Moisten greens with chicken broth.
- Sprinkle with salt.
- Cover and let simmer for several minutes, until greens are completely wilted.
**Top with sunflower nuts for an extra crunch and a nutty, salty flavor!!**
