A Simple Tasty Recipe to cook Pasta

What you need:

2 tins of peeled tomatoes

Fresh basil

Black pepper and Salt

1 500G tub of Mascarpone cheese

2 x large chicken breasts

400G Pasta

150G Grated Cheddar Cheese

First of all get a large pan of water up to the boil, you will want your pasta to be as soft as possible for this dish. Once boiling, add a few table spoons of olive oil and some salt, and then let it simmer down. Place the pasta (whichever type you prefer although shapes that hold sauce are better) into the pan and let it boil.

Next, place two chicken breasts onto a grill without any seasoning. Depending on the thickness they should cook in approx 10 minutes. Turn them every few minutes to have an even cooking while preserving the moistness of the chicken. Be sure not to forget while making your sauce!

Now take your tins of peeled tomatoes and pop them into a large saucepan. Using a sharp knife, chop them up so that the skins are still juicy but in mouth sized chunks. Now turn on the heat.

As the tomatoes begin to warm up take a handful of basil and rip it up as you place it into the pan. Add a healthy dose of black pepper and salt.

Now that the tomatoes are beginning to simmer take your mascarpone and add 4 generous teaspoons into the pan and stir quickly. Try to get the cheese as evenly distributed into the sauce as possible. Turn the heat down once mixed and let it slowly simmer for around 5 minutes, stirring to avoid sticking.

By now your chicken should be grilled through. Take both breasts and slice them into medium sized chunks and add them to your sauce.

Check your pasta. If the pasta is now very soft drain the water and add it to the sauce. If it needs more time just take your sauce off the heat until your pasta is ready.

Once added to the sauce, stir your pasta and chicken into the mixture until they are entirely covered. Put your pan back onto a high heat and the cheddar cheese. Stir vigorously until the cheddar is melted. You need to be quick otherwise you will find the cheddar collects in chunks with the chicken rather than becomes part of the sauce.

Once it's all mixed together and nice and hot, simple pop it into a bowel and serve with some garlic or crusty bread.
