Slush is good any time!

If you're anything like me, you enjoy a slushy, icy treat every so often. Maybe you go for sorbet, ice cream, or popsicles, but I tend to go for these home-made, adult-oriented slushies!

This first ice is a twist on a Spanish tradition and makes a GREAT dessert after a dinner party or gathering amongst friends!

Sangria Ice

  • 1 cup red wine (dry)

  • 1 cup water

  • 1 lb frozen mixed berries

  • 1 orange, thinly sliced

  • 1 lemon, thinly sliced

  • 1 tablespoon lemon juice

  • 2/3 cup orange juice (preferably fresh squeezed)

  • 1/4 cup sugar

  • 6 orange slices

Combine first 5 ingredients in large bowl. Cover and chill for 8 hours. Remove orange and lemon and discard. Press berry mixture through a sieve; discard solids. Combine berry mixture,lemon and orange juice, and sugar in an 8 inch dish, stirring until sugar dissolves. Cover and freeze for 45 minutes. Stir berry mixture with fork every 45 minutes until completely frozen and slushy (about 4 hours). Remove berry mixture from freezer and scrape with fork until mixture is fluffy. Serve in stemless wine glasses and garnish with an orange slice.

Blackberry Rose Ice

This next recipe also makes a good end to a party or gathering, but with a bit of Mid-Eastern flair! The rose water flavor is very subtle but adds just a little something special to make it interesting!

  • 1 1/2 cups water

  • 1/2 cup sugar

  • 1 lb blackberries (fresh or frozen)

  • 4 tablespoons vodka

  • 1/4 teaspoon lemon zest

  • 1 tablespoon lemon juice, fresh

  • 1/2 teaspoon rose water

  • 6 blackberries (for garnish)

Combine water and sugar in small sauce pan and bring to a boil. Cook over medium-high heat or until sugar dissolves; stirring constantly. Remove from heat; cool. Pour into a blender and add blackberries, lemon zest and juice; Process until smooth. Strain mixture through fine sieve and discard solids; stir in vodka. Pour mixture in 11x7 dish ; cover and freeze for 45 minutes. Stir mixture every 45 minutes with fork until completely frozen and slushy. (about 4 hours). Remove mixture from freezer and scrape with a fork until fluffy. Serve in stemless wine glasses and garnish with a blackberry

Spiked Pineapple-Mango Ice

A delicious way to finish that jerk chicken Carribean feast! Bring the islands to your dessert!

  • 1/2 cup water

  • 1/3 cup brown sugar, packed 2 cups unsweetened pineapple juice

  • 1/2 cup mango nectar

  • 4 tablespoons dark rum

  • 6 pineapple chunks (for garnish)

Combine sugar and water in medium saucepan. Bring to a boil. Cook over medium-high heat or until sugar dissolves, stirring constantly. Remove from heat; cool. Stir in rum, pineapple juice, and mango nectar. Pour mixture in 11x7 dish ; cover and freeze for 45 minutes. Stir mixture every 45 minutes with fork until completely frozen and slushy. (about 4 hours). Remove mixture from freezer and scrape with a fork until fluffy. Serve in stemless wine glasses and garnish with a pineapple chunk.

Honeydew Bellini Ice

A traditional bellini combines peaches and prosecco which was made famous at Harry's Bar in Venice, Italy. This version uses pureed fresh honeydew melon and will end an alfresco dinner with flair.

  • 2 cups honeydew melon, cubed

  • 1/4 cup sugar

  • 2 teaspoons lemon juice, fresh

  • 1 cup sparkling white wine (prosecco)

Combine melon, sugar, and lemon juice in blender; process until smooth and sugar is dissolved. Stir in prosecco; pour into an 11x7 baking dish. Cover and freeze for 45 minutes. Stir mixture with a fork every 45 minutes until completely frozen and slushy (about 4 hours). Remove mixture from freezer and scrape with a fork until fluffy. Serve in dessert glasses

These are all light and wonderful desserts for that adult occasion, but don't keep your options limited! You can always substitute another fruit juice for the alchohol and make it kid-friendly. Great for any time! I hope you all enjoy them!
