When you think about salsa, the first thing that normally comes to mind is the spicy tomato salsa that is served in most Mexican restaurants. It usually comes in a bowl alongside a basket of tortilla chips. However, there are also a variety of other interesting salsas that are not tomato based. Many other types of salsa combine the sweet taste of various fruits with the spicy kick of hot peppers.
So next time you are in the mood for salsa, try one of these unique combinations. These salsas can be served with chips or crackers, as well as dress up some of your favorite fish or meat recipes.
Pineapple Mint Salsa
Ingredients:
- 2 cups fresh pineapple (diced)
- 2 tablespoons white sugar
- 1 teaspoon fresh lemon juice
- 1 teaspoon orange juice (low-pulp)
- 1 jalapeno pepper (diced)
- 2 tablespoons fresh mint (diced)
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1/2 teaspoon salt
Combine all ingredients in a large bowl.
Mix with wooden spoon to combine.
Cover and refrigerate overnight.
Serve with fish or other type of meat.
Mango Avocado Salsa
Ingredients:
- 1 large mango (peeled and diced)
- 1/4 cup red onions (diced)
- 1/2 cup green bell pepper (diced)
- 1/2 cup red bell pepper (diced)
- 2 tablespoons white wine vinegar
- 1 tablespoon extra virgin olive oil
- 2 teaspoons fresh chives (diced)
- 1 medium avocado (diced)
Combine all ingredients in a large bowl.
Toss gently to combine.
Cover and refrigerate approximately one hour.
Serve with chips or white fish.
Pineapple Corn Salsa
Ingredients:
- 1 cup fresh pineapple (chopped)
- 1 cup red bell pepper (diced)
- 1 cup corn kernels (frozen or canned)
- 1 (15 ounce) can navy beans (drained)
- 1/2 cup red onions (diced)
- 2 jalapeno peppers (chopped)
- 1/4 cup orange juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Toss all ingredients in a large bowl.
Cover and chill overnight.
Serve with tortilla chips, fish or poultry.
Orange Salsa
Ingredients:
- 2 large oranges (peeled and diced)
- 1 large tomato (seeded and diced)
- 1/4 cup red onion (diced)
- 1 teaspoon garlic (minced)
- 1 jalapeno pepper (minced)
- 1 1/2 tablespoons fresh cilantro
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Toss all ingredients in a large bowl.
Cover and chill four hours.
Delicious with white fish, but also can be served with other meats.
Peach Tomato Salsa
Ingredients:
- 2 large peaches (diced)
- 1 tablespoon lemon juice
- 1 tablespoon orange juice
- 2 medium tomatoes (diced)
- 1/2 cup red onion (diced)
- 1 large jalapeno pepper (diced)
- 1/4 cup olive oil
- 4 tablespoons white vinegar
- 3 tablespoons honey
Combine all ingredients in a large bowl.
Cover and chill overnight.
Serve with fish or chicken. Also makes a delicious spread on crackers.
Cranberry Lime Salsa
Ingredients:
- 1 pound frozen cranberries (chopped)
- 1/4 cup green onions (diced)
- 2 tablespoons cilantro
- 2 tablespoons mint leaves (chopped)
- 1/2 cup fresh lime juice
- 1/2 cup honey
- 2 medium jalapeno peppers (chopped)
Place all ingredients in a food processor and pulse until finely chopped.
Cover and chill four hours.
Serve with poultry or use as a spread on crackers or chips.
