Hey, I Said "Almost..."

This dessert saved my teaching career. Well, perhaps that's an exaggeration, but it did make me a bit more popular among my peers.

When I first began teaching, I was an eager beaver and had terrible "rookie-i-tist." I'm sure I made everyone in the building want to gag. I was so polyanna. You know the types, those "Gee, I'm so glad to be here and are we havin' fun, yet?" and "I just love these kids, but do they always throw up on your shoes?" and "Aren't they just darling??"

Gag us all with spoons and doesn't it sound a bit too much like Palin? I'm so embarrassed that I got that close to her giddiness. I soon discovered no one wanted to hear my cheer. Unlike Palin, I am a quick study. How was I supposed to know that I was expected to walk as though in pain, paste a tight smile on my face, and look confused? No one told me, so it really wasn't quite fair.

My mother had a phrase for that special, pained walk of the experienced. She called it "Walk like you have a corn cob stuck up your butt."

Oh, that walk.

To make up for my sickening "Howdy-doodie" greetings for my fellow teachers, I quickly repented for all my enthusiasm and brought this dessert into the teacher's lounge, with a little tent card that said "I am happy to be a part of the team, please forgive my "just-a-tad-too-much zeal." I am working on being depressed."

At the risk of really making them mad with that little piece of sarcasm, I left the sweet dessert, and hid in my room. I received many visitors that day, with the pudding on their plate in hand, they cracked up, ate the dessert and asked for the recipe. Ah, peace at what price?

Perhaps we should share the secret with Congress? Naaa, let them eat cake.

Almost Better Than Sex Pudding Dessert

Note: If you don't like the peanut butter, just omit, it's still delicious

Ingredients:

  • 1 c regular flour
  • 1/2 c cold butter, chunked
  • 1 - 1/2 pecans or walnuts, chopped
  • 1/3 c creamy peanut butter
  • 1 c confectioner's sugar
  • 12 oz frozen whipped topping, thawed but still cold
  • 2 - 2/3 c cold milk
  • 3.9 oz instant chocolate pudding mix
  • 3.4 oz instant vanilla pudding mix
  • 1 milk chocolate candy bar, like Hershey's, chopped

Procedure:

  1. Put flour and butter in a food processor, cover and process until mixture is like little crumbs. Add 1 c of the nuts, and pulse a few times to blend.
  2. Press into a greased 13 in x 9 in baking dish. Bake at 350F for 2 minutes until light brown. Cool completely. Do not overbake, you do not want this to taste scorched.
  3. In a meduim bowl, beat the cream cheese, peanut butter and confectioners' sugar unti lsmooth. Fold in 1 c of the whipped topping and spoon over crust.
  4. In another bowl, whisk mild and both pudding mixes for 2 minutes (chocolate and vanilla together). Let stand for a couple of minutes for thickening purposes. While it is soft set, spread it over the cream cheese layer.
  5. Top with remaining whipped topping. Sprinkle with chopped chocolate bar and remaining nuts, if desired. Cover and refirgerate for at least 1 hour before serving.

Give away to someone who doesn't like you and they will, after a few bites.

Give away to someone who loves you and they will melt before your eyes, being at your total command. Keep this dessert on hand, as the effect wears off in about an hour. Long enough, though.

Live well, be sure and walk extra when you eat this, it has lots of calories, I've never counted because I'm scared.

Note: I have seen a similar recipe in many books and magazines, and really didn't know who to credit. I have made this for years, and don't know where it originated, so please forgive me for not citing an exact source. Thanks and enjoy, no matter who started it!

This is very easy to make and I think it's what you should serve to yourself and friends for Thursday's debate...that way, no matter what happenes, you'll be content!!

I make a similar one but with a graham cracker crust mixed with butter and almonds then baked.add the cream cheese beaten and layers of choco pudding and vanilla and then topped with whipped cream.. and the choco shavings on top...we call it YUM YUM...Is very simple with instant puddings....sounds we are both little devils hey? This is so true about teachers.  During my first year of teaching sixth grade a fellow teacher took her daughter out of my class because I did not have a Christmas party for them.  My team teacher did not have a party for the kids either, but he gave them all a candy cane and for some reason she thought that was a party.  After that I started to have parties whenever anyone else did just so they would not think I was the Grinch.  I did not purposely forget their Christmas party, truthfully I had the flu and few days earlier and came back the day before Christmas to finish the grades and our lessons, so I just ran out of time.  Gee I do not miss the politics of teaching, but I can see how a wonderful recipe such as this would win over a tough crowd.

Hi SweetiePie, You are so right; to get along with the crowd and teach at the same time is rough. I don't miss that part, but teaching the kids was great...once I got their behavior in line. Many of them ended up behaving better at school than at home. LOL

confectioner's sugar is a powdered sugar, maybe that's the same for you there? you will be addicted to this, I only make it on special days, but the kids have often requested it for birthdays...or cook outs...etc. it's FULL of calories....sigh. isn't everything?

hey ! it sounds great and im hoping to make it for my friend for his birthday tomorrow ! but i just got a few simple questions lol . i read over the recipe like 6 times and printed it off , and before i go to get my groceries i was wondering , do you have to use confectioners/castor sugar ? and it says about cream cheese in the recipe , but doesnt say how much of it you need in the ingredients , so how much cream cheese do you need ? and what size of glassware should i use , square or rectangular ? thanks please get back to me on this asap ! =)
