63Amish Morning Hash Recipe:: Mrs. C
Mrs. C uses her own free range eggs for this, gets the fresh ground sausage from a neighbor, and uses butter cheese or cheddar from her relative's (the Bontrager's) cheese workshop. It is a wonderful recipe, one of my favorites.
1/2 stick butter; 1 chopped onion; worcester sauce to taste; 4 c diced, pre-baked potatoes; grated cheese of your choice; 1 lb fresh sausage; salt & pepper. 6 or 8 eggs, scrambled with cream.
Saute diced onion in butter until transparent; add sausage and cook until brown and crumbly; add diced potatoes, worcester & salt & pepper and cook til browned. When everything is browned, add the scrambled eggs and cook, when nearly set add the cheese to melt.
Serve with homemade toast & apple butter or Amish peanut butter.
