Another Crazy Breakfast Recipe: Puffy Pancake Pockets

Let's get crazy with pancakes!
I love making pancake sandwiches, every day of the week you could have a truly unique breakfast experience using a few easy to prepare and tasty ingredients. I prefer using Krusteaz Buttermilk pancake mix, it's less sweet and more buttery than many of the other "just add water" pancake mixes. Also I use butter. So that's probably a good indicator of how "healthy" these are, just in case you're counting calories. So, in no particular order, here are three pancake sandwich recipes that are sure to please everyone in the family:
1. Bacon, Egg and Sharp Cheddar
When making these I definitely use the Krusteaz Buttermilk pancake mix, you don't want anything too sweet, (at least I don't,) and the combination of buttermilk and cheddar cheese is absolutely divine. I like to make them thick, but on the smaller side, a 10" skillet works great for these. If you've a family of four you'll need eight pancakes. While cooking up the pancakes, set your Foreman Grill started on the bacon and crack your eggs into a bowl. I prefer my egg yolks unbroken and I make them sunny side up so the yolk soaks into the pancake. (Yum!) If you crack them in a bowl first it'll be easier to transfer them into the skillet. Once your pancakes are finished you'll have a few minutes left on the bacon. This is when it is time to start your eggs after covering your pancakes with paper towels to keep them hot. Pour your eggs into the skillet and cook them up while putting the finishing touches on the bacon, (I like to grind a little fresh black pepper over the bacon slices,) then start sprinkling crumbled cheddar cheese onto the pancakes. Place the finished egg and bacon on top of the cheddar cheese so it all melts. Cover with a few more sprinkles of cheddar cheese and a second pancake and you're good to go!
2. Peanut Butter, Honey, and Nutella
I like to make these up with thinner, larger pancakes, more along the consistency of crepes. To do this, I just add a little more water into the pancake batter. Make sure you cook them well done, otherwise they'll turn out spongy. Line up your ingredients / utensils on the counter where they're easy to get to and mix your pancake batter a little thinner than the recipe calls for. (I kinda do this by feel and sight, you'll figure out what works best for you.) Cook up the pancakes and drizzle with honey, then take small spoonfuls of Nutella and peanut butter, spreading them over the honey. This will keep the honey trapped against the pancake. Cover with a second pancake. You can garnish this with some strawberries or other berries, maybe sprinkle a little powdered sugar on them, but I like them as is.
3. Ricotta Cheese and Strawberry Jam and Chocolate Chips
Let's face it... ricotta cheese is good with everything... and the addition of chocolate chips makes this even better. (Try some Hersey's Special Dark chocolate chips, they're fantastic!) Make your pancake batter according to the directions and add 1/2 cup of chocolate chips. (Or what looks right to you, depending on how much pancake batter you're making.) In a second bowl mix together some ricotta cheese and strawberry jam. Warning: This will look absolutely disgusting. Get over it, the taste is divine. Once your pancakes are finished slather them with the ricotta cheese and strawberry mixture, topping off with another pancake. This is a pancake pocket I like to add powdered sugar or a light chocolate syrup drizzle over. Basically it's a breakfast desert, so don't over-do it.

My poor children. Pancakes are a perfect time to sneak fruits and veggies in so... sweet potato, winter squash or beet puree or Chocolate superfood powder. If we don't have any of those I do mashed bananas, thawed berries or diced apples. Plain pancakes? huh?
Nicole: I like your recipe ideas a lot. Not for everyday, but as a treat. Or perhaps on a day we're going skiing or hiking. Or have nothing else to do after breakfast but sit and feel the pancakes expand inside our tummies:-)

Randy Behavior: Too funny! Sounds fantastic, when my daughter was younger I used to do the same thing! Now, these pancakes are "special treats" ... otherwise yes, it's wheat germ, (she loves wheat germ!,) mashed banana's and other diced fruits or yogurt instead of syrup. Yum! What is this chocolate super food powder? I like chocolate and I like super food... sounds intriguing!

I just made pancakes this morning from scratch. I always (and I have no idea why I do this) add a splash of vanilla and a sprinkle of cinnamon to the batter. Just gives them a bit more interest with out sweeting them up.
These are good suggestions. I will keep them in mind for next Saturday's breakfast!
