Anyone have recipes for SOUPS that could be considered a full meal in themselves?
54Turkey Vegetable Soup or Stew
I have been trying to eat healthier and for the past five years I have replaced ground turkey in every recipe I use instead of ground beef. I think I may have bought one package of ground beef in the past five years and that was because I wanted to make a meatloaf and wasn't sure about using the ground turkey. I have since used it in meatloaf and find it delicious too. I use it in all of my vegetable soups, chili, and I even make my own sausage out of it.
One of my favorite vegetable soups include, 2 cans of each, corn, tomatoes, green beans, and one can of sliced carrots. I then add some fresh chunked potatoes,one pound of ground turkey, one small onion, garlic powder, salt and pepper to taste, and a couple of jalepeno pepper, 4 beef bullion cubes. I live alone so I make a batch of this and put it into freezer bowls and take it out as needed.
Of course you can always substitute the canned veggies with all fresh ones but most people do not always have the fresh ones on hand so you can use the canned ones instead. I just heard the other day that you can substitute the potatoes for parsnips. I was told that after they were cooked in the juices of the soup, you can not tell the difference in them than the potatoes but that they are much healthier for you. I will try that some day to see how it is.

This is a great recipe, bjjp. I thought I would try it before I commented. I didn't have the jalapeno peppers but had a few hot banana pepper rings, so I threw those into the mix. Also, I used a packageĀ of ground beef instead of turkey. I just tried this 'cos I had a bunch of canned vegetables but not fresh ones, so I have frozen some of the soup to keep for later days! Thanks for sharing!

You are so welcome! I love it and my kids loved it. I like to make a batch and freeze the extra for future use.
I forgot to mention earlier that this soup can also be made in a crockpot so when you get home from work, supper is ready! Serve a salad and crackers on the side if you want but it is not necessary.
