Appetizers
73Appetizers are one of my favorite things to make because they keep everyone happy while waiting for the main meal. I like to have finger foods that are easy to prepare. I love to be in the kitchen but I like to make the most of my time. I love to put together a great get together for any occasion. If you are looking for some easy delicious appetizer ideas and recipes you have come to the right place.
Pinwheels
These are always at hit around my house. I make them for the holidays and they never last for to long around my crew. They are supper easy and really good.
Tortillas 1 package
Roasted Red Peppers 1 jar
Leaf Lettuce a few leaves
Cream Cheese 1 package
Smoked Turkey/ Ham slices
Using your tortillas spread your cream cheese over the tortilla this will help roll them & keep them rolled up. Next make a layer on one end all the way across the tortilla of meat, thin slices of red pepper and lettuce. Slice your pinwheels into 1/2 rounds & place on a tray to serve. Make sure you lay your items so you can roll the tortilla with the other items length wise so when you cup it there is a layer of each item. Cover your tray with plastic wrap & place in the fridge until you are ready to serve them.
Fried Ravioli
1 1b roll Jimmy Dean Sausage
1 Package Won-ton wrappers
1 Jar marinara or spaghetti sauce
Fresh Mozzarella
Directions:
Brown your sausage and drain well.
Using your won-ton wrappers place a rounded tablespoon of the sausage in the center of each wrapper. Using your finger dip into the water and run your finger around the edge of your wrapper. Place another wrapper on top. Use a fork to seal the edges completely. Repeat until you have filled the remaining won-ton wrappers.
In a large, heavy skillet, or deep fryer heat the oil over medium heat until the oil is ready. Using your slotted spoon place as many Won-tons into the oil as you can with out the edges touching. Cook until they begin to brown around the edges begin to then turn to cook the other side. Take them out and drain and drain them on a paper towel to drain some of the grease off.
Once you have them all cooked layer them on a serving dish and grate a little fresh Mozzarella over the top or Parmesan. Serve with hot marinara sauce yummy!
Hush Puppy Bites
1 box Corn Bread Muffin Mix
1 -1 1/2 tsp Dried Onions
1/2 tsp Garlic Salt
Mix Corn bread muffin mix with just a bit less water than it calls for. Add your dried onions & garlic salt. Mix wel. Drop by small teaspoon amounts into hot oil to fry until golden brown on both sides. Serve alone or with a dipping sauce.
Optional* 1/2 tsp red pepper or red pepper flakes, parsley, basil or your favorite seasoning to add a different flavor. To try a new flavor measure out a teaspoon full of batter and add a small amount of your seasoning you want to use mix form into a ball and fry. This way you can test all kinds of flavors!

Corn Tortilla Quesadillas
3 chicken breast
Garlic salt
1 package corn tortillas
cheddar cheese
Grill your chicken and season with garlic salt. Once they are fully cooked slice into thin slices. In a hot frying pan or on a hot griddle place a corn tortilla then place your chicken and cheese in the center of your corn tortilla then place another tortilla on the top of it. Brown your tortilla one the first side then flip it over and brown the other side. Remove from heat and cool.Cut into half then half again.
Place on a serving tray to serve hot or cool.
You can serve with Salsa, Guacamole, Ranch or sour cream. You can also make these with flour tortillas it's up to you.
For New Years parties all I make is a bunch of appetizers or hors d'oeuvres instead a a big meal. Things like the old stand by lil smokies and chips and dip are very easy to serve. Throw in a few homemade goodies and everyone will love it. That way everyone can pick what they want throughout the night.
As the party moves through out the night I just move the empty platters and I get the chance to party with everyone with out a lot of clean up it's very little trouble to refill platters or remove empty ones from the table. Disposable cup and plates make it a nap to clean up. Although last year we had confetti everywhere lol We had a great time though that is really all that matters right?
