Granny Smith Apple Soup

Here's a delicious soup that you and your family are sure to enjoy. I serve it hot but some people like to serve it chilled. Be sure that you use Granny Smith Apples for your soup as that is what gives it the wonderful flavor it has.

1. 12 Granny Smith Apples peeled , cored, and diced fine.

2. 2 Cups peeled , diced Yukon Gold Potatoes., ( Cooked and Drained )

3. 1 Large Vildelia Onion peeled and diced.

4. 1/4 Cup Celery chopped fine.

5. 4 Cans Chicken Broth.

6. 1 Teaspoon Ground Sage.

7. 1 Teaspoon Salt.

8. 1 Teaspoon Ground Cayenne Pepper.

9. 1 Teaspoon Hot Hungarian Paprika.

10. 4 Tablespoons Olive Oil.

In a large skillet cook your apples , onions , and celery in the olive oil. Cook until your apples , onion , and celery are done. Add these ingredients to a large stock pot and then add in all your other ingredients.

Cook for 2 hours on a low simmer and then remove from heat and allow to cool to room temperature. Now you want to puree the soup in your food processor until you have it all pureed.

Return all your soup to the stock pot and bring it almost back to a boil but not quite. Serve in bowls garnished with sour cream and fine chopped celery leafs.
