Awesome Breakfast Burrito's with a Greek Twist

Working downtown can be detrimental to your budget... one way to avoid the crunch is by bringing your own breakfast to work. If this seems to be a daunting task, why not start out easy, buy a french press and a quality travel mug. Bringing coffee or tea to work can save you upwards of $20 a week. Don't laugh! Think about it, if you get a medium Starbucks coffee every day you're spending at least that. Most the french presses I've owned cost less than a weeks worth of Starbucks coffees. Kinda scary, huh?
However if you're feeling a little more adventurous and would like to give making your own breakfast a whirl, why not try out this super-easy breakfast burrito recipe:
Start out with the right ingredients... for this recipe you'll need:
1. Bob Evans Sausage
2. Earthbound Farm Organics pre-washed salad mix (Arugula works nicely.)
3. Tzatziki sauce (yes, you read that right, cucumber sauce)
4. Kraft Shredded Cheddar Cheese
5. Eggs
6. Goya Salsa Verde
7. Flour or corn tortillas
8. Butter
9. Onion
One of the neat things I like to do with this recipe is cook up all the sausage at once, preferably the night before I plan on making these. That way I don't have to worry about it taking too much time in the morning and I know they're completely cooked through. Brown the sausage as you would usually wrap it up in paper towels and put in a plastic container in the fridge. Organize your work space for tomorrow's breakfast real quick before you go to bed. Make sure the skillet, kettle and french press are ready to go. Clear off space on your counters to make your breakfast the next morning, making sure paper towels, utensils and plates are readily available. Organize your ingredients in the fridge so you can locate them easily and grab the quickly. You won't want to do this in the morning.
The next morning, start the kettle and measure out the coffee. Organize your ingredients at your work station and pull out a flour tortilla and your butter. Slice a thin slab of butter off and place the tortilla in your skillet. If it doesn't fit, don't worry, as the tortilla heats up it will become more malleable.
Continue to heat the tortilla on low heat until it becomes soft, then place it on your plate and spread a spoonful of Tzatziki sauce over the tortilla kind of like you'd put pizza sauce on. Take the kettle off and start the coffee brewing, then start two of the already cooked sausages in the skillet on low. While they're warming up thinly slice some onion up and add that to the skillet.
Begin crumbling the sausage with a wooden spoon or some such implement until crumbly. While the onions and sausage are cooking crack a couple of eggs into a bowl and whisk them with a fork. If you add a dash of milk your eggs will be more fluffy. Once you've your eggs thoroughly beaten add them to the sausage and onion mixture.
Fix yourself a cup of coffee.
While your eggs set line your Tzatziki sauced tortilla with your salad mix. Fluff the sausage / egg combination until eggs are completely cooked. Turn off the heat and add shredded cheddar cheese to the top allowing it to melt into the mixture, then transferring the whole contents of the skillet onto your tortilla. Sprinkle with salsa verde sauce and roll up your tortilla. Enjoy!

I started making breakfast burrito's and wraps during the day to use up all the ingredients in the fridge, so since we had cheddar that's what's going into everything right now. Another idea, if you have the time on the weekends is to fry up some golden potatoes and add those in there. The possibilities are limitless!

Sounds great but I work at home now so have to make lunch and drinks anyway. One thing for sure though, does save a lot of money.

Lady_E: Don't deny yourself the pleasure just because you don't have the time in the morning! Most of this stuff can be whipped up the night before, pre-cooked, and that cuts the cooking time in half! All in all, they take about ten minutes to make.
