BBQ without a grill
We didn't own a backyard grill when I was a kid, so if we wanted bbq ribs, this is how my mom made them. Of course, my husband's family never fixed them any other way BUT on a grill. We have learned to compromise over the years, although my mom's recipe is still the best, we cook them both ways.
Pressure cooker
2 family paks of country style ribs (pork or beef)
1 large sweet yellow onion (chopped)
1 large green bell pepper (chopped)
6 celery sticks (chopped)
2 large bottles of your favorite bbq sauce
Pour a small amount of olive oil in bottom of pressure cooker and start heating, and at same time start browning the ribs in a pan. You just want to brown the meat a few minutes on each side. Mix the veggies together in one bowl. Put a layer of ribs in the bottom of the pressure cooker, then a layer of veggies, then pour some bbq sauce over that and then start over with your layers until all the ingredients are used. Place lid on pressure cooker and lock. Heat on med. high until pressure reaches 15 lbs. and then cook for 20 to 25 minutes. Turn off heat and follow directions on pressure cooker to slowly release pressure. Do not remove lid until pressure has been released. When done, ribs should easily fall apart. I take the sauce with the veggies out of the cooker and pour it over potatoes or rice for a spicy side dish.
