BROWNIES

I love brownies as does my family. I have tried scratch recipes but sometimes I think this is one area of baking where the mix is just as good. But after the brownies are done, you can have some fun decorating them. Its a great treat and a great gift. I don't know too many people who don't like brownies.

You can use whatever store bought mix you like. I use Betty Crocker Low Fat Mix. Kroger grocery store also has a good low fat brownie mix. When I mix the brownies the Betty Crocker calls for 1 egg, 1 TBSP oil and 1/2 cup water, I add 1/2 cup semi-sweet chocolate chips to that. Mix only until moist, do not over mix. Take a 9x13 inch pan and oil only the bottom and then spread the mix. Bake at 350 for 25 minutes until the top looks cracked. Don't over bake.

As soon as you take them out of the oven spread 1 cup mini marshmallows and 1 cup of semi-sweet chocolate chips. You can also add some chopped nuts, my daughter is allergic so I can't but I think that would taste good also.  Let them sit for 30 minutes to get nice and melty. I realize that I am adding calories here so this is why I use the low fat mix to try to balance it. Or at least that is what I tell myself lol.

Carefully spread out the melted chips and marshmallows. I use the back of a spoon or a spatula. You have to be careful not to tear up the brownies. I also like to throw some colored sprinkles on now. Let them cool completely before cutting. Brownies are always hard to cut neatly in my opinion. I take a sharp knife and heat it in a cup of hot water and cut slowly, cleaning the knife and redipping in the hot water as needed.

You can add marshmallow cream by putting spoonfuls down on hot brownies with the chocolate chips and let them melt the same as above. You can also add any flavor of chips you like. Chopped up maraschino cherries also work. The ideas go on and on.

Be creative and go and make some brownies tonight. Your family will thank you.

Wow. I bet they have tons of calories! but worht it, huh? They look delicious. I love chocolate and marshmallow together.
