The NYTimes article by Jane E. Brody linked below will scare you into a more heathful diet with fewer trans fats and harmful cooking oils. More exercise also helps. Fast foods are the worst offenders, and restaurants aren't much better.
"This little biochemical switch turns out to have potentially devastating health effects. In addition to raising bad cholesterol (especially the small L.D.L. particles that stick to blood vessels) and lowering good cholesterol, trans fatty acids raise blood levels of triglycerides and lipoprotein (a), whcih raise cardiovascular risk.
"But that is not all. Trans fatty acids, when compared with cis-unsaturated fats, also raise blood levels of substances like C-reactive protein that are markers fo bodywide inflammation and cellular dysfunction, also linked to heart and blood vessel disease. "
