Here is a great way to make a one pot meal of creamy chicken noodle soup with a limited amount of time. It's based on maximizing your "cheating" skills to the ultimate by using prepared foods, rather than spending hours of making stock from scratch, and cleaning and chopping lots of veggies. This is a 30 minute recipe, which is my ultimate goal when cooking just about anything. And although I'm not a professional cook, I loved the flavor and texture, and friends were equally impressed. Once you have the ingredients in the pot, make sure you let it simmer, preferably for a few hours.

Ingredients:

2 cans condensed Cream of Chicken Soup

4 cups chicken broth, (or enough chicken bouillon for 4 cups) Note: you can use less broth to get a creamier, thicker soup, so adjust the consistency to your liking.

1/4 to 1/2 teaspoon garlic powder (to taste)

1 cooked half chicken—boned—meat cut into bite sized chunks. You can buy these at grocery stores and places like Costco (in the US and Canada) for around $5 or $6. Buy either savory or lemon herb.

3 celery stalks (or about 1.5 cups celery, chopped)

2 cups frozen or fresh veggies of your choice. I used frozen corn and broccoli which needed to be used soon--the advantage of using them in soup!

2 small cans of mushrooms, or 8 oz of fresh mushrooms, sliced.

1-8 oz. package homemade style egg noodles. Brands might include Kluski, Mrs. Miller's, Essenhaus Amish Country, etc.

Putting it together:

In a large stock pot or 4 quart kettle, add the following:

2 cans condensed Cream of Chicken Soup

3 cups of chicken broth (or bouillon)

1/4 to 1/2 teaspoon of garlic powder

Without bringing to a full boil, warm the stock and add the rest of the ingredients the way they are listed above.

Let simmer on very low heat for at least 1.5 to 2 hours. Simmering longer will help develop the flavor.

Makes about 6 to 8 average sized servings.

Note: Doubling the amount of stock to use a whole chicken and increasing the other ingredients as needed will yield about a gallon of soup to my best estimation. Makes about 12 to 14 larger servings.

Left over soup is a great freezer food to warm up on upcoming cold days.

Great recipe, Daniel! I like how your heading for this reads is under the guise of Bachelor's Cookbook! I screwed up a lot of recipes on my worst days and damn near burned down half my block, but I learned from my mistakes (arson?). Thanks for the great recipe. Bookmarked!

Thanks, dohn!! LOL Sounds like the title of your next book, "Cookery By Arson." I think I'd display it proudly in my home just for the title! Bachelor's Cookbook is me, all right. I'm not a chef by any means, but I do have fun when "hafta" cook. Friends and family keep asking for recipes, so I decided to put them on hubpages. Thanks for stopping by!

Cookery by Arson?

I gotta read that! LOL

I went ahead and bookmarked this Daniel... It's the perfect recipe for a chilly fall weekend. I rarely take the time to cook for myself, I'll try to break that habit with your Quick and Fabulous soup.

I'll let you know if I have success...

That sounds delicious, Daniel. There's a nip in the air where I live and this sounds just perfect for an evening meal. Guess it's the slow cooking that does the trick?

Yes, simmering for long periods really helps develop the flavor. Additionally, you can store leftovers in the fridge and warm the next day and the flavor is just as wonderful. Let me know what you think!

I love this recipe. I am actually vegetarian but my husband loves anything chicken. And from the looks of it, I should be able to prepare it with very litttle afford. Well written. Thanks Daniel.

You're welcome, Leop. Maybe you could use the soup base, add the veggies and replace the chicken with tofu? Just an idea. Thanks for stopping by!

Maybe this was already covered in the comments above, but don't the vegetables and noodles get mushy if you simmer 1 1/2 to 2 hrs?

Daniel Carter profile image

Daniel Carter  says:

Yes, they can get mushy and that's a good point. I didn't worry about that much, but softer veggies can be put in the last few minutes of simmering time to avoid mushiness. Excellent point. Thanks for pointing that out!

Hey Daniel........This looks divine. And just right for a winter night. Are you planning any more hubs on this topic?I will be back just in case.

Hi monaz. I don't have a lot of original recipes, but those that I do have, I share. More on this topic may or may not happen, depending on whether or not I want to dig in and really start playing in the kitchen, which is only about once a week at this point. However, this is apparently a winner recipe and I hope you love it was much I do! Thanks for stopping by!

Checking back -

I made it and it is awesome Daniel :-)

I ate all of the mushrooms and lots of the broccoli while it simmered. But I always do that, so I planned ahead and used extra broccoli.

rmcrayne, I simmered 2 hours+, noodles do not get soggy ;-)
