Baked Sea bass
61The baked bass is a dish very well appreciated by connoisseurs of fish, which recognize the best white meat, prized and fragrant, exalted in this recipe, the baking of seasoned vegetables and spices, and finished with a good splash of white wine. Wonderful idea for a summer dinner!
Ingredients
* Garlic 1 clove
* Alloro 1 leaf
* Basil 4 leaves
* Bass 1 of about 800 g.
* Carrots 1 large
* Onions 1 medium
* Oil extravergine olive oil 6 tablespoons
* Hot pepper (or black pepper) q.b.
* Tomatoes Perini tomatoes 250 gr
* Parsley minced 2 tablespoons
* Salvia 2 leaves
* Celery 1 rib
* Wine white wine 2 tablespoons
Preparation
Take the bass, cut off the fins, flake it remove the gills and removing the innards through them and taking care of not cutting the stomach.
Wash the bass under the running water and then put in her belly, through the branchial opening, two leaves of sage, one of laurel, the clove of garlic and the salt
Scalded tomatoes in boiling water and remove their skin, then coarsely
mince it, wash and clean free and chopped carrots, celery, onion and
parsley.
Turn the oven to 180 degrees.
Place in a baking
dish, the chopped vegetables with the oil and let it dry over a low
heat, then add the chopped tomatoes, basil and
cook it for at least 5 minutes over low heat. Adjust salt, pepper and
laid the bass in baking dish, making it cook for a few minutes and turn
on both sides in the sauce.
Put it in the oven and cook for at least 40 minutes, sprayed when necessary with his own cooking, and towards the end sprinkle it with two tablespoons of white wine and a pinch of salt and fresh ground pepper.

Advice
To prepare the sea bass in the oven, you can also buy a frozen sea
bass, but you will have to leave at least 12 hours thaw in the
refrigerator.
