Baked Chicken O's with Sweet & Tangy Dip
65This recipe satisfies most kids cravings for chicken nuggets. Plus, it is much healthier for them as you bake the chicken instead of frying it.
Depending on the age of the children, they can help with the cooking by mixing some ingredients as well as coating the chicken pieces.
Ingredients
Canola oil spray
2 boneless skinless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon pepper
1-2 tablespoons flour
2 egg whites, lightly beaten
1/2 cup plain bread crumbs
2 1/2 tablespoons shredded coconut
4 tablespoons maple syrup
4 tablespoons orange marmalade
Directions
- Preheat the oven to 350 F.
- Coat a nonstick baking sheet with canola oil spray; set aside.
- Slice the chicken into 12 strips and sprinkle with salt and pepper.
- Dust the chicken with flour and dip in egg whites.
- In a medium bowl, combine the bread crumbs and coconut.
- Dredge the chicken strips into crumb mixture.
- Shape the strips into circles; make sure the ends overlap so they will stay together when baking.
- Bake until golden brown, 10 to 15 minutes.
- In a small bowl, combine the syrup and marmalade as a dip for the chicken.
